Great video. Your camera is amazing! I love how giving Lorraine is. Always helping outside of her comfort zone, always thoughtful and courteous. And such a deep thinker. Probably why she preps so well cuz she's always looking 3 steps ahead of every situation. Pen is a replica of Lorraine. And Randy.... Just a go getter, momma got a lot of qualities from Poppa! You four make an outstanding team and I thank you for sharing.

May I suggest that you buy a gallon or so of Rustolium style paint for your tin roof? My folks had a tiny former stable built in 1901 and in the early 70s I decided to roll a coat of aluminum colored paint on the roof-no prepping and just a long pole with a roller attached. When my folks passed on we sold our home and the realtor could not believe that 50 years later, that roof still had paint and it had plugged up all those egged-out nail holes in 120 year old tin to keep the stable/shop dry and sound.

I wouldn't worry about it. He looks OK. If you buy a steer then it will be by itself when you butcher little brother. If you're concerned then you can put him next to the pigs, companion's don't need to be the same type of animal.

I live about 5 miles South of the Event Center in Allen where the conference is going to be. Unfortunately, I will be flying out to Colorado around the 18th to help my daughter who is expecting baby #2 any day at that time. We've gone to this Event Center for Home & Garden shows a few times as well as Disney on Ice last year. We've lived in North Plano for over 30 years now. If you have any questions at all about this area, please let me know. We love it here.

I love your channel. Im going to be mama hen here, I do want to encourage you to not use a saw on your lap and to tuck your shirt tails in. My husband, when my daughter was 2 or 3, was making benches for around our table and did just what you did. The saw sucked in his shirt tail and pulled the saw onto his leg. He was very lucky it did not cut his artery. He missed it by an inch. We were farmers and he was in a walker for a month because he cut through so much muscle in his thigh. He also had a lot of nerve damage. I got to do the having. Love you and your family and don't want you to get hurt.

Wow. That metal roofing is really thin. I've never seen it tear so easily by hand like you just did to that. The really old tin roofs were thicker than that. Did metal roofing get cheapened up in the 80s or what?

I would hang 8 days. Longer only allows bacteria and yeast to flourish, both would leave items some would be allergic to or harmful to their health. The 8 days of chilling will allow many of the harmful bacteria that could come from butchering to die off.

Are you able to raise the height of this cooler instead of building a expensive walk-in one? I was thinking to raise it from the bottom/floor level, by adding a couple of feet from there, rather than messing with the roof area. It would be much cheaper and you'd still have the benefit of it being a mobile cooler. Something to think about.
