yeah but he is so famous that he is skewing the pizza world (at least East Coast US) to his overburnt, crispy tastes for pizzas. I, actually, I like CT pizza! I like that crisp stuff but I also love Neapolitan and classic NYC pizza and Sicilian and he rates them lower. I am afraid pizza places will start making more of what he likes and we lose all this diversity of pizza making which makes East Coast so freaking great!

Though, I think that so many people watch his stuff that when they go to one he rated high for their "burnt" pizza and they get the place's regular one, they will be disappointed and let it be known in reviews - so he is impacting both tastes of people and small shops he rates too. I ain't saying OMG only burnt crisp pizza will remain in America, but there could be an actual shift in tastes over time. He is very influential!

Owner seems like a pizza nerd in the best way possible - tinkering with all variables to make great pizza. Quiet, head-down, hard working, humble guy. Those pizzas, especially the second one, looked amazing. I'd add two tenths to those scores, Dave was already full and the place did not have the typical "vibe" the Prez prefers. If the place had an Italian name, was at least 30 years old with an old owner, we know those scores would be higher, errbody knows the rules.

Dude has a small restaurant in operation in Brooklyn for 10 years. He knows what he's doing. I bet part of the humility about the scores was him knowing how many he's going to be turning away next week. Doesn't strike me as the sort of dude who's looking to make millions, more the sort of dude who cares about and enjoys performing his craft.

When the guy says "...and we can cook the shit out of that..." that's the proof that he's actually a pizza genius. He's basically saying he's done all his homework and can quickly put together a pie that he can throw into the oven and then get distracted and accidentally overcook for a few minutes and it'll still be good. I like the confidence. Dave obviously liked the pizza.

No I think what the man is saying is based on the style of pizza in the first review , he has to be delicate with the temp because there are thin and thick parts (look at the crust compared to the rest). If he blasts it too much part will burn and part will be soft . The second pie is more homogenous so he can blast it 😊

"You'd never know"? We know! I live in the neighborhood and we've been going since it opened. For sit down pizza it is the only place to go, and for takeout we split between Wheated and the corner place, mostly because the corner place delivers and is open all day. (Not Rocky's, a different corner place). We had a mushroom/truffle white pie from Wheated a few weeks ago that was the absolute best, and I'm not usually a white pizza guy. We also had our favorite spicy sausage pie that night and the table was split between which we liked better. They make great cocktails too. If you go, get there before 5 or after 7. If you show up at 5:30 the entire opening crowd will still be eating and you'll be waiting a long time. They also do scheduled takeout, you pick a time slot and when the slots are gone, they're gone, so plan ahead. You can't reserve a table but you can reserve a pie.

Owner is a humble and great guy. What the review doesn't make clear is that Wheated is probably one of the best whiskey bars in all of Brooklyn if not the greater nyc area. Over the years they amassed an amazing collection of whiskey. One of the only place I was able to find forresters "Birthday Bourbons". Great place to go for a pie and have a cocktail and sample a few rare whiskies.
