Way easier to start with triangles first than your way; BUT I get why you did it that way as it has the least amount of waste. If you wanted the points in specific places then starting with triangles you can dictate the points i.e. centre of walk ways for looks etc.

Does this flooring require underlay and an expansion gap covered by scotia or skirting?

No need for any underlay (it's already integrated to the product). ~3mm expansion gap recommended.
