I think I'd make mine chai-style coffee--add some cinnamon, clove, and cardamom to the instant coffee. To avoid graininess you make a strong tea with the spices, then strain that into your instant coffee. Top it off with some cinnamon and/or nutmeg for a pop of aroma.
