The Xbox version has better load times (not as fast as the GameCube version), but Crash (and only Crash) has this weird cell shaded fur on him.

The xbox version was the definitive edition with original models, 60hz and the same control as 2 and 3 on the ps1. It is known widely as the successor to Crash 3.

If you were trying to find the best version, apparently the X360 version has the fastest loading times, added fur texture to Crash, fixed some music issues that are found in the PS2 version, and apparently upscales to 720p.

Just looking back at the crash games I think that in this situation, it's the lack of good textures that makes the games look so plain. In the older games, they had less polygons but the detailed textures made the environment and the characters more pleasing to the eye.
