To prepare this pickle, heat some oil in a pan and add mustard seeds, sliced ginger, garlic, red chili, curry leaves, and chopped green chili. Sauté for about a minute, then add red chili powder, turmeric powder, fenugreek powder, hing (asafoetida), and salt, and again sauté for about 2 minutes. Next, add sliced onions and sauté until they soften and turn slightly golden brown. Lastly, sprinkle some sugar for a balanced taste.
Pour in some vinegar, ensuring the onions are well mixed and coated. Allow the mixture to cool completely before transferring it to a sterilized jar. This tangy and spicy onion pickle can be refrigerated and enjoyed with a variety of dishes.
