My dad is from Jiangxi and grew up in Nanchang, and his entire family is still there. I would say Jiangxi cuisine isn't the necessarily the spiciest, but just assume EVERY SINGLE DISH has been cooked with chili peppers. The liang (cold) banfen is a staple in our household, and a quick/easy/cheap dish to whip up to feed a lot of people. Just make sure the noodles you buy are the "Jiangxi" mi fen ;-)

I love your videos. As someone allergic to wheat, this one was especially great for me. I wish you'd write a book for tourists, with photos of the dishes, their names in ,with English pronunciation, and the expected price to pay. their names in Chinese, with English pronunciation, so in a restaurant you could show the person taking your order. Also, phrases in Chinese to let waiters know if you have allergies or don't eat certain foods.

First of all: love your channel, it's helped me let go of some prejudice I had against china as a whole that I didn't even know I had. It's also made me more adventurous in my own food endeavors and incorporate spices much more in my cooking. I would loooove to try some of the dishes you show. Also, always funny when derk shows up. Now to this video: cracking up over the fact that we freak out when people don't wear gloves or hairnets and my guy over there is frying without a shirt on 😅 Final note: I am devastated that the most controversial breakfast item in Germany you might encounter is eggs and sausages. I want to have noodle soup and hot and spicy oumami things too 😭

Pingxiang is the place in Jiangxi that eats the spiciest. (萍乡) Nanchang is like Chengdu, both capitals where the spice level is more toned down in favor of more blended flavors.

Amy, you have tried so many Chinese dishes, you musst have had liangfen. You probably just forgot. It's pretty typical. English name should be grass jelly. tastes a bit herbal and bitter, but also cool and refreshing like mentol.

@@detectivedrew_26 Here is what I found online about the difference: 「涼粉」和「仙草」其實均是由涼粉草製成,不過香港稱此為涼粉,而台灣則稱作仙草。 雖然大家的原料一樣,但兩者的製作方法卻大有不同呢! 香港的涼粉,先將涼粉草浸水煮成汁後,再加入粘米粉、粟粉、糖製成,因此口感會較爽口彈牙,而且顏色亦會較深。

Well done for visiting Nanchang Amy! Not even many Chinese people visit the city, let alone know where it is haha. I'm from there, and grew up in Aus, so this is so relatable! No doubt you'll cover it but 水煮and烧烤 are also famous and get you more chili. Hongdu in Nanchang has a lot of small eateries what are quite famous.

Oh hey, when you were here, did you also make any videos sightseeing at Poyang lake? and maybe Wuyuan Huangling? i went by there on the HSR earlier today and was looking up where i could stop by next time i take that route (HZ to HK). btw, that bowl of pig blood duck intestine noodles looks amazing. i love goose and duck intestines, it's got such a nice chewy crunch and the accompanying layer of fat... yum. also, that "smoky flavour" is probably what we call wok hay in Hong Kong/Guangzhou, the "air/feel" from a sizzling wok.

Can't believe that Amy you visited my hometown, NanChang. NanChang rice noodles will be best the rice noodles among all provinces. It's chewy and bounced. Mixed rice noodles with WaGuan Soup are basic daily food routine for NanChang people.

As blood is rich in iron, it probably accounts for the "metallic tang" as an after-taste, but it should be a healthy food, as a deficiency in iron can cause anemia.

I am from Nanchang, and I live in Australia now. So good to see you finally doing an episode about my hometown food, it makes homesick so bad. Anyway, I have to remind you, when you have breakfest, make sure you don't miss out century egg meat ball soup(皮蛋肉饼汤) if you are OK with century egg, it will blow your mind.

It is also highly recommended to try “shuizhu” 水煮, similar to “malatang” 麻辣烫,but there is still a difference.For me,I basically eat it once a week.And this is one of my favorite dishes.

The small pot of soup shouldn't translate as "boiled". It's double-boiled炖(繁體字"燉") in long hours. If in short period of time, it's called 蒸steam. In Mandarin, 炖 can also mean slow-cook braise with direct low heat (which is called 炆 in Cantonese, and 炖 is only referred to long-steam). Keep in mind that 炖湯 is absolutely superior to boiled soup煲湯 or 滾湯 (which makes the liquid cloudy, less umami, and meats end up dry and rough).
For a moment I thought it was under 5 Yuan. Gees that gave me goose bumps. I was like" What is this girl doing to herself??!! Oh ok it's $5. That's legit. 🤣🤣
