I respect each one preparing wine. This is sweet desert wine. For the quantity of grapes used 600 gms sugar 1 1/2 litre water 1 tsp yeast and handful high quality wheat is sufficient. I don’t use egg white. Lasts for years.

I stirr for 3 days and keep it undisturbed for 21 days Caramelize and keep another 15 to 20 days to get it settled and clear

Fermentation doesnt happen if there is no sugar. Yeast convert the sugar to alcohol. Which in bread helps build the shape of the sponge. But without sugar no Fermentation.

Hi, after adding the ingredients, there will be around 12.5 litres of product to leave for fermentation. The container should be filled only 3/4th with the unfermented wine. SO we would recommend a Bharani that has at least 15 litre capacity.
Can we blend the grapes instead of mashing them, though in 2020 I mashed up with my hands only.. TQ for this recipe, 😊

Yes. But blend it only without water. And do not blend it to too fine paste. Just a smash. That's it. It actually helps to have more red colour to the wine. I have already made wine today like that.

Yeast is basically Bacteria. Good Bacteria. It will take care of all unwanted bacteria. Nothing to worry about using Hands or Foot to smash the grapes. Make sure cleaned well before on it.
