I respect each one preparing wine. This is sweet desert wine. For the quantity of grapes used 600 gms sugar 1 1/2 litre water 1 tsp yeast and handful high quality wheat is sufficient. I don’t use egg white. Lasts for years.

Thanks for sharing this, but i never used egg white but used cinnamon accordingly to the measurements rest of the methodss r same I learned from my Amachi God bless you Sister

Sounds great! Egg white is used as a fining agent. Fining is a process where certain substances are added to wine to help remove impurities, clarify the wine, and improve its texture and appearance. If you don’t want to use egg whites, other fining agents like bentonite clay, isinglass, or activated charcoal can be used instead.

I stirr for 3 days and keep it undisturbed for 21 days Caramelize and keep another 15 to 20 days to get it settled and clear

Fermentation doesnt happen if there is no sugar. Yeast convert the sugar to alcohol. Which in bread helps build the shape of the sponge. But without sugar no Fermentation.

Aunty, earlier you mentioned that 4.5 kg of sugar is required for 3 kg of grapes. However, you’ve only added 2.25 kg of sugar. Could you please clarify?

Hi, Please check the 9:59 mark of the video, where Kochumol Aunty explains how to mix a syrup made from caramelized sugar (2.25 kg) diluted in water with the wine. The confusion arose because this process occurs only after 35 days of winemaking. Team ONM Food.

How large must the bhazhani be to have a 3kg grape quantity to ferment? Please give detail

Hi, after adding the ingredients, there will be around 12.5 litres of product to leave for fermentation. The container should be filled only 3/4th with the unfermented wine. SO we would recommend a Bharani that has at least 15 litre capacity.

Can we blend the grapes instead of mashing them, though in 2020 I mashed up with my hands only.. TQ for this recipe, 😊

Yes. But blend it only without water. And do not blend it to too fine paste. Just a smash. That's it. It actually helps to have more red colour to the wine. I have already made wine today like that.

Hands and the equipment used need to be thoroughly sanitized between each process to avoid contamination. You can also use gloves to ensure maximum cleanliness.

Yeast is basically Bacteria. Good Bacteria. It will take care of all unwanted bacteria. Nothing to worry about using Hands or Foot to smash the grapes. Make sure cleaned well before on it.

No. Not compulsory. You can make without eggs. Also you may add two or three cloves too.

Hi egg white hepls to settle the solid particle at bottom and clear the wine. You can replace with Pectinase enzyme power, add it after crushing the grapes.

Egg is optional. It is used to make the wine clear. But it could slightly alter the taste. You can use some store bought pectic enzyme instead.

This is a dessert wine, hence it is sweet. Typical wine recipes have less sugar. You can adjust the sweetness as per your choice.
