But because he used the mold, the batters kind of blended together which took away the straight edged line we're used to seeing. The way he did it in this video is more efficient, but when you're trying to save time you tend to omit some details. For what it's worth, it's not too horrible.

Sorry to Cake Boss & Buddy, but I don't like either product. Plus, once I bought one of the Cake Boss products and I was not happy with it. That small sieve, did not work for almond flour. I gave it away. I needed a sieve that is easier to clean, and works with a wooden spoon to deal with the process of working with almond or hazelnut flour, which is not easy. But it is good for flour and icing sugar sifting. Also, I don't like having so many tools when one can do many jobs. Don't have the space and don't like having so many, especially if I don't have to. People who have the space and income and like having so many gadgets would probably like them though. There is always a little itty bit left over of the coarser bits of almond. Even after using a food processor to grind it finer. For some reason they never grind it finer. One always has to do the step for French Macarons. I am guessing it would make it too expensive to grind it finer or there is a good reason it's not done. Plus, have to grind it with the icing sugar. Maybe it would turn to almond butter, so you can't grind it fine as flour. Hmm. I think so. Big fan of the show and Buddy and the famiglia.

The thing with sieves is that it depends on what job you want to do. If you need to sift course flour like almond meal, the best option would be to go for a sieve with larger holes. For finer flours, you use fine mesh strainers. I have one of each for this reason.

Katelyn Burt It's only good for cake flour and similar fine products. Not almond, hazelnut or any other flour that requires extra work getting through a sieve. I would have thought that was made clear. But clearly, people can't seem to understand where I am coming from. Just taking it as a negative comment. Not understanding my side of the issue. And people who are in similar situations would understand. If you have the budget to spend, space to store and like having lots of gadgets, it's not a problem for you. But it clearly doesn't work for everyone.

Elisa K. A proper fine sieve will stop any small chunks from getting through. Ground almonds always have chunky bits..... if you want those chunky bits in your mixture I defiantly wouldn't be using a fine sieve for the job.

Danielle Barker it's an epic fail because the checkerboard pattern is messed up and uneven. now this is not to say that he is not an artist and that he sucks as a baker because he showed his skills and the cakes are probably delicious, but the whole purpose of the video was to show what the checkerboard molds can do and what they do is make uneven and funny looking cakes.
