A tip from a cake maker with 50 years experience. When piping buttercream or anything that softens in your hand, soak thick kitchen paper in iced water, wring it out then wrap the chilled paper in 2 or 3 layers, firmly round the outside of the piping bag before you pipe. It won't affect your grip and it keeps the piping medium chilled for much longer. You could also use thin muslin .... Trust me, it really works😀 Edit: make your own butter from double cream, it's much whiter so you don't need white food colour.

My mom had a massive stroke 2 years ago and she's come so far with having control of her hands and fingers. We wanted to find something to do together and I started looking around on KZbin and I came across this video and was truly inspired by it. I am beyond blessed to still have my mother I honestly didn't think I would ever be able to do anything like this with her. But we are having so much fun learning. I love the way you teach. It's easy for her to follow, and we spend a lot of time laughing at her interpretation of what you are doing. She's getting better. Well we are getting better, and her confidence is really improving. I am beyond grateful for what you are doing for all of us who want to learn something new or find something to bond over. I love the look on her face when she makes a flower and it gives me goosebumps just thinking about it. We're on strict incomes so we're using cheap tools so they're not the best quality but it's amazing how much happiness it's bringing her. So thank you for sharing your gift and talent. I feel like I'm getting my mom back, and it's amazing. So thank you from the bottom of my heart. You have become a blessing in my life, and I don't even know your name. This is one of the most interesting and easy to follow cake decorating videos I have ever seen. Beautiful! If you are making them for someone's wedding how would you store them until you can deliver them? Also, you asked for any suggestions. Years ago I worked in a school and one of the mums made a cake for a teacher for the beginning of the summer holidays It was absolutely amazing! She had cut away part of the cake and what was left intact became white cliffs. At the bottom of the clffs was sand and then the blue sea which was hard like glass and it had little white waves on it. She had made little figures of children in red and white striped and blue and white striped bathing suits playing in the sand making sand castles and they had tiny buckets and spades. There was even a little seagull. It was so beautiful and really too good to eat but it has stuck in my mind for 40 years! How she made any of it, especially that sea, is beyond me but I would love to see it re-created.

The hard glass like stuff was most likely made from isomalt.sand can be made from brown sugar, tinted white sugar, graham crackers or vanilla wafers or any combination of these.

@@Matilda-yI have not tried these specifically yet but if they are what I think they are, they are essentially large condiment cups. If you look closely, they have a rolled edge that will be much harder to tear than a regular cupcake liner. I would say these would be ideal if you want to treat them like a little bowl and eat them with a fork or spoon (which personally I think is ideal in most situations). If you don’t want to have to buy/use utensils, I think you’d be better off with the smooth wrappers that have a little tab so you can peel the wrapper off. Those can still end up on the messy side, but not as messy as the traditional cupcake liners.

Beautiful flowers! You're so talented. Tip for colouring ... add a very small amount of purple (just a fraction of a drop on a toothpick) to pull the yellow out and then add your white. You'll use less of your white food gel 😉

This is awesome. A girl who was part of our youth group at church is getting married and she asked me to make her cake. Her sister is gluten intolerant and I was wondering how I could make a second cake and still ensure that there would be no cross contamination during the cutting and serving. You solved my problem. All the gluten free cake will be individually decorated cupcakes on a pretty stand so there is no cutting involved and no getting cake from the wrong recipe.

Use crisco. Higher melting point opposed to using butter. The icing is stiff like needed, and no worries about running icing. “Royal white icing” is what I used.

Just came across your tutorial and had to subscribe. Your flowers are gorgeous and you make it look effortless. I love the original green color until you added the yellow and brown and showed me a more realistic leaf color. Never know adding brown could make something look so much nicer. These are gorgeous, but LOTS of work. I'm wondering how far before the wedding do you allow for making your cupcakes, and how do you preserve their freshness between decorating and delivery? I worry about refrigeration causing 'staleness'. What do you think? Also, any 'hot wedding day" advice for setup/display when you are worried about them melting?

Aww thank you, I have done a few orders and whenever I do the baking is max 2 days before the event and the day before the order I would make buttercream and decorate this way the cupcakes only stay in the fridge with buttercream for 1 night they will be nice and fresh (as bakers you definitely have to sacrifice some sleep 🙈so your order is as fresh as possible) and for hot weeding days I would suggest using American buttercream since it’s a crusting buttercream but Swiss and Italian should also be fine and don’t take your cupcakes out for display until as late as possible especially if it’s outside because the heat of the sun can start to melt the cream, hope these tips help 🤗

Hi there! I’m not a professional but my friend and I just made 300 cupcakes for her wedding starting about 6 weeks before the big day and froze them. Her wedding was last weekend and we took them out of the freezer about 2 hours before the ceremony and they were completely thawed and PERFECT by the time we got to the reception!
