● La Bavaroise at Café D-1
165 g whole milk
165 gr of cream 30% fat
50g egg yolk
15g sugar
6 g of gelatin 200 blooms
36 gr of cold water to rehydrate the gelatin
165 g cream 35% fat
10 gr of soluble coffee
