Made this, it was delicious! I added a tad bit of salt, a sprinkle of cinnamon. Only had two oranges, so used 2 oranges, 3/4 cup of sugar and 3/4 cup of water. Didn't have lemon, so squeezed out the last bit that I had of lemon juice, but it came out delicious anyway. Thank you!

My marmalade became so hard that I need to heat it up before eating. Bcz of sugar ?

Hi. You have a to higher a ratio of Fruit and Sugar to Water ! That's why it has come out 'Hard'. Also a case you might have not 'soaked' the peel (If its the case that the Fruit itself is hard and chewy ?) Tip : Can you warm the Marmalade in their Glass Jars in the Microwave ? (Don't use with Metal Lids when heating !) I would recommend say 50% Power over about x3 Minutes. Then stir and do another x3 Minutes. Marmalade is prone to 'Bubbling on up like a molten mess. If heated to high, for to long ! Once you have "warmed up" more liquid Marmalade : add it all to a Deep Glass Casserole Dish (that fits the Turntable) and add say a 1/3 more liquid ! Do this. . . Fruit Cooks, Sugar Caramelises (hardens more). on just adding liquid straight off. Ideally : Put the Warmed Fruit through a Sieve. Separate the Orange Shreds from the Sugar Syrup (Save this !!!) Add the Orange Peel to that Dish, add a 1/3 more liquid. Can be Water, a Splash of Lemon Juice too, if you want a sharper / more tangy tasting Marmalade. This preserve should be a tangy Breakfast Spread, not a sickly sweet Jam ! Once the Fruit and Water have cooked together and made a lovely fruit combination (cooking, then leaving to soak, say overnight) : Brings out the Pectin from the Peel ! Pectin is what sets marmalade. : Better Setting Properties, for anyone who has "Runny" oops marmalade. Also bag the Pips and white Pith and cook this in the fruit too. Once done. Remove the Mesh Bag and discard its contents ! Next stage : Slowly add that 'reserved' Syrup you drained off in that Sieve. Then incorporate that back into the Fruit mix, say bit at a time.* If total Volume is to much to do all in one. Divide the re-cooked Fruit with Water, into two* Dishes. Add a 1/4 of that reserved (sieved) Syrup, to each Dish. Cook for x3 Minutes, add another 1/4, then another. Etc. Etc, until all is added back in. Then: Get your Glass Jars all cleaned up and Sterile again. Either warm them in an Oven, or have them in a pan of Simmering Water. Then turn upside down to drip dry. While still hot to touch. Add the Marmalade back into them. And re-seal with Clean Lids. Once cooled, the Marmalade Jars should be air-tight closed, via a vaccum ! Hope this helps. 😎 Final Tip : Add a bit of cooked Marmalade to a small plate, add this to your Fridge. Once cooled for say x5 Mins : run your finger through the sample. You want a "Wrinkle" to show. Not runny syrup or overset (hard) preserve. . . More water is required, like yours ! If its not 'Set' on the plate : You need to cook it for longer. So to evaporate more liquid off. . . But don't over do it, Sugar burns easily. Slow cooking times and lower temperatures are the answer ! 😉

Thank you for sharing. I did it twice a time, it went quite perfect. I will just recommand to slice in a thin julienne orange peels and not to add all the julienne for the same pot, whether add a double cup of water. If not, you won't have a lot of marmelade, but only julienne of candied orange peels.

You can also put all the scraped out orange centres and the white pith in a muslin bag and boil with the peels and water before adding the sugar and squeeze out after cooled this contains alot of the pectin. Discard what's left after squeezing the muslin bag out

Thank you for the comment:) The outcome depends on the heat level, the type of pan you use, the orange's thickness, and how ripe it is. So if it looks translucent it should be okay, and it's fine to cook it for a little longer or shorter👍

美味しいそうですね! UK food って、世界ではジョークのネタにされる事が多いですが、日本は結構 UK food が好きな国です。 日本人が大好きなカレーライスは元々は UK food ですし、日本で「食パン」と呼ばれている bread は元々 UK food の tin bread が原型になっていますし、他にも日本では色々な UK food が食べられています。 日本は少し変わった国なのかもしれません(笑)

So you don't have to use the corn syrup to avoid the sugar to crystallize??

Does it make one jar or more? Also, can I then put them in a hot bath to sterilize the whole thing so that I can store on the shelf? I like marmalade but if it make more than 1 jar i won't be able to eat it in a sufficient amount of time,

The amount depends on the size of the orange, but it's about one jar. Since you seem to be a very knowledgeable cook, I know you'll make a great marmalade❤️❤️

thank you for watching 🥰 technically you can... but the clementine skin has a bitter taste to it so I suggest to soak it in the water separately and boil it a couple of times before you put it together or just simply use less skin and add a little more lemon✨❤️

J'ai fait 6 oranges et deux citrons... C'est peut-être un peu fort de citron. J'ai mis deux tasses de sucre mais il en aurait fallu un peu plus. Mais très bonne tenue et le goût est agréable. Donc merciiiiiiii !!!!!

thank you so much for your comment❤️and yes 100000000% sure I should stream I stream on twitch sometime from my PC but I can't bring my PC to kitchen 🤔and I have only iPhone7 and inside camera quality is 😵 I tried outside camera but as I can't see the screen my face was half out😅 how are everybody doing live stream cooking??do they have actual camera? or they bring pc in the kitchen?? or maybe I can just eat in front of pc?? mmmmm🤔
