My fermentation stalled, and I don’t have any warm places, then I had an idea. The wine ended up in bed with the electric blanket on and duvet over. It is now bubbling !

I just found your channel and I couldn't help but notice you don't use any Campten tablets. Everything that I've read about wine making shows that Camptwn tablets are a must.

Many people don't use them, there really isn't much need for them

@@HappyHomestead yes, I have heard that from some people also. Sometimes however, I need to backsweeten and then if you don't use the captain tablets the fermentation can start again. you have a good idea, just use less sugar during your initial fermentation so not as much alcohol isn't produced and you'll have a sweeter wine. I will try that next time.

I made 2 batches of this and both fermented really well smelt and tasted lovely to start with , but after I transferred it to clean demijohns they both taste vile (no orange flavour at all) also I used a hydrometer and both read 0. What could have gone wrong because I’ve strictly followed the recipe

It's funny how the orange never seems to spoil, open and exposed for months at a time. I've noticed that since my first mead (JAOM, which later became the basis of my favorite recipe). I'm now venturing into a new enterprise, a juniper-based mead. I'm thinking mandarine peels and cloves to make it complex, and tea leaves for body. Any thoughts?

Juniper mead is fab, but go easy on the cloves as they are pretty powerful! Sounds fab!

Excellent video, but I do have a question: is there any disadvantage substituting commercially packaged orange juice for the oranges? I am guessing that you get about - what ? 1/2 L (about 1 pint) from the 8 oranges and so if I go with OJ and use about 500 - 750 ml of the juice (plus the lemon) and perhaps the zest of a few oranges might that work just as well?

Very good question Bernard, I have recently made an oj juice wine, using 2l of carton juice, and the main difference is colour...the carton oj is brighter, and the flavour is deeper, but I do prefer the fresh orange wine as it seems fresher and more real. I'll be doing a side by side taste test and comparison when they are bottled up

Store bought juice is often concentrated (for shipping from country of origin) and reconstituted which diminishes the flavour somewhat due to loss of volatile oils and even in not concentrated/reconstituted it would still lose volatiles due to being pasteurized and processed/ stored for extended periods (plus some volatiles will extract from the rind and pulp during fermentation when using fresh oranges)...

Just a thought as a complete novice, as you had supposed to sterilise all utensils used, what do you do about the fruit you put in as that can’t be sterilised? Does it introduce any bacteria at all? Thanks.

I think they added some dye to the oranges before you guys got 'em. Just look at your fingers! Never seen 'em stain skin like that before, and I like to zest 'em first so I generally get lots of oily citrusy goodness all over them. Never quite that color so far. Perhaps because of your locale, they might add stuff to keep them fresh and nice looking. I understand this recipe. It's the citric acid that's the problem. Straight orange juice tends to get nasty when fermented, or so I am told, so using actual fruit with a sugar wash mitigates this problem. Just gotta play around with the ratios a bit. Looks good! Also, did your wife make that sweater? I like it very much. Keep making these videos! Hell...even ordinary stuff that you might think boring might interest someone else. You live in a place like no other in the world...so unlike what I see when I step outside. Yard work, gardening, home repair and improvement...even doing the laundry might be interesting to someone who does theirs in a different way.
