This makes me want to make a "Steak and Cheese but absolutely not a cheesesteak(TM)" sausage. Onions, green peppers, cheese whiz, lightly ground beef/pork mix, and mushrooms. I'd cook the veg to get some of the moisture out (maybe a tiny bit of color) and then mix it into the sausage, but I'm no expert.

Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.

you could place all that in cheese cloth and squeeze out the moisture. It would result in a dryer mixture for a sausage and lower the risk of a burst. It would also open up the chance to soak the meat in a liquid overnight to try and introduce flavour
