How to get a crispy skin everytime 101. Use lambskin casing. Pre cook any moist sausage in water gently until the sausage firms up , fry then for a few minutes until crispy and golden. Roll the sausage after stuffing them to evenly spread out the filling, most of your bursts still come from you overstuffing certain areas of the sausage which then expand under heat and RIP AND TEAR it from the inside, also the pre cooking helps against this too. You should start trying to grill some of those stubborn sausages that end up with gummy skin. They're not crisping up, because too much juice is ending up in the pan and it's boiling instead of searing. If all the drippings end up in bottom of a grill they'll be away from the sausage casing and it will still be hot (and dry) enough to crisp it up.

I also think he's got way too many holes. The holes are to prevent air expansion from bursting the sausage, not to give water and fat room to leak out. To stop something like this powdered cheese from causing a burst, leave room at the ends.

I believe I have found the secret recipe as to the reason these videos are so addictive: I find in the mixing of ingredients process that I go back and forth from "this is such an awful and disgusting plan that I need to shut this off" to "okay, at the very least for experimental reasons I must see how this concludes" and either way if I leave thinking "that was so foul and should have never been attempted" or "I cannot believe that looks as delicious as it does" I always want more. Mr Sausage you are a master of your craft and we all love and appreciate your commitment to this art.

I'm relatively new to the channel, but I've been watching some of his older vids and he's boiled sausages before with the same gummy result as far as I'm aware. It's a question of the mix he puts inside, he's not making a sausage based on a tried and tested recipe, he's winging it so it's bound to be hit or miss.

@@Alberich_Prince_of_Dwarves best way to make them crispy would be grilling them and letting the fat drip. Also, fat % should be 20% to 30%, dried cheese is probably all fat, that's way too much fat for a good sausage.

In reality, Mr. Sausage could be getting a lot more 5/5 sausages if he improved his technique. For example, the way he quickly pushes the filling into the casing at 2:13 will inevitably result in a lot of air pockets, which is why most of his sausages end up being squishy and disgusting.

Saw a good comment down here but lost it now... So hopefully Mr Sausage see's these! Bursts are common on this show from not punching in enough holes, and for not draining the oil while cooking, which lets it leak back in. Also lower the heat. So please cook a little lower and if the pan starts to flood, dab some of it up with some kitchen towel or pour it into a container! (Not to mention kinda hard to crisp the skin if it's *underwater*. I'm sure you more than anyone would prefer less bursts (and so crispy skin)!
