Maison Hirose -
Maison Hirose is the result of a meeting between two people who are passionate about their profession. Naoto Hirose of Japanese origin, who has worked in the biggest Parisian brands, and Paul Petersen, a bakery enthusiast. The two friends met during a training session in a large Alsatian company and decided to set up the Maison Hirose project together. It started in autumn 2015 with the opening of a bread factory in Andolsheim, Colmar. The objective is to supply professionals in the restaurant, hotel, bakery, and pastry industries, with bakery-pastry products. In the beginning, they only produced bread for businesses mentioned above but the project has evolved with the opening of a retail shop directly delivering their goods to individuals in the surrounding areas of Colmar, Mulhouse, and Strasbourg, but also in the rest of Alsace.

Wow, gives me flashbacks to my days working at a bread bakery. I'm glad they also show the cleaning of the equipment and moving racks in and out of refrigerators. This is not the photogenic part of the job, but it takes a huge amount of time and work.

Respekt für eure Arbeit. Bei dem Tempo was ihr da vorlegt wisst ihr aber auch was ihr am Ende des Tages getan habt. 👍 respect pour votre travail. Mais au rythme où vous mettez là-dedans, vous savez aussi ce que vous avez fait à la fin de la journée. 👍

That is the type of place I had trained as a baker to work at... but here I am in the U.S. where I have not been able to get a job for what I trained for

j'entends qu'il y a deux japonais au moins? ^^ C'est bien qu'il soit resté en France si la boulangerie le passionne, parce qu'au japon c'est tout autre chose, c'est presque 100% snacks... à base de pain ok mais c'est pas de la boulangerie vraiment comme on l'entend. Wohaaaaa des paris-brest, des éclairs et tout et tout ^^ Je travaille dans une boulangerie à Tokyo, la seule pâtisserie qu'on fait c'est.... la quiche -_- pâtisserie salée quoi. Le reste c'est du snack et des sandwichs mais ça porte une devanture de Boulangerie/pâtisserie. Ils font le pain pour les snacks en fait, mais y a quand même du pain et de la croissanterie. On est 8 filles (en roulement) et 4 mecs dont le chef.

Very nice video, full respect to the Japanese who work double the speed of other, people are just lazy with their pace, anymore demand you'll see demonstration of human right and freedom, especially in the us, basically the latins and south American migrants are doing the real work.

It’s BIO but not ARTISNAL bakery. You can see that they are Working like MACHINE. No human feeling & touch. FOOD needs to be with FEELINGS.
