What a wonderful video of this bake shop in Sweden. You can tell the owner/baker takes pride in creating his breads, buns, pastries plus interacting with his customers for their breakfast requests. I am so envious of what he creates, and bakes. To see the breads and buns baking was amazing. But the layers within the croissants were mouthwatering. I live in a town in Ontario Canada, 🇨🇦 and all the family owned baked shops have disappeared over the years. Having large grocery stores baked goods taste like cardboard. With mass production of baking in a factory, freezing, shipping, and baking at the store level produces a tasteless product.

Here .... in Winnipeg Canada ....I walk about four blocks there and back to a bread bakery named Hildegard's that does things right ....organic / non g.m.o. / stone ground / air yeasted / wood fired . If you should find yourself in this city this is the place for bread , homemade soups and very fine freshly made espresso !

I am a bit older and have been a nurse many years of my life but I now would rather be a baker of breads or work in a pastry shop. I miss the stand alone bakery or pastry shops of my youth! Believe it or not I have worked many years on the night shift so doing either one of these other jobs would suit me well. I enjoy the solitude of working alone or with a few enjoyable working partners. Very enjoyable to watch this man. Thank you
