I have a small theory: hear me out, first he's a dumb, just hungry creature. Then he eats Eggman, and suddenly he's smart enough to know how to taunt and scare his victims before eating them, then he gets Tails. And after he turns Tails into a minion, why does he suddenly go after the Chaos Emeralds? I assume he takes some knowledge of his previous victims, because after ending Eggman/Tails, he starts to speak proper English to Knuckles when taunting him, and either locked him up, because as we saw, Sonic AFTER eliminating Tails, is back in his first form, so he can freely cycle through his evolutions, or he got Tails to lock him up. And with every evolution he's getting smarter, with everything he eats he gains more knowledge of his goals. He even learns to laugh as we see him get the first Emerald. He knew where to find the Emerald as well with no previous knowledge from it, UNLESS he somehow took Knuckles ability, to sense the emeralds/ chaos energy. Simply, he takes his traits from previous victims. And the reason Knuckles got away was probably because the obvious being who talked to him freed him, or Shin Sonic spared him for perhaps even being willing to stand up to him, forcing him to use more of his forms than usual to even catch him, and after taking his ability, simply let him go since Knuckles isn't much of a threat. Shin Sonic even willingly talked to Knuckles instead of using him like Tails, theres too much to work with to explain, but take this as you will. I'm sorry if I explained it awfully.

Even I came up with the same conclusion that's Sonic was somehow infected with a parasite that is causing him to become so hungry because the parasite has to feed off the host and if Sonic didn't eat anything then he would have died from starvation and he even did the same thing to tails and this spreading of the parasite is similar to rabies which is why he chose to grab tails by the throat so that the parasite can get to his brain faster eventually getting to his brain and controlling everything against his will that's what the parasite also did with Sonic he just lost control of himself and then the parasite took over so yeah I do not believe that shin Sonic is another form of Sonic it is simply the real Sonic all along but the parasite took over him that he doesn't have control of his Free Will anymore this is why knuckles in dreadful vision said Sonic will never do this confirming that he was just like our Sonic before he was infected and sonic was just a victim to the parasites control

shin sonic remids me of the wendigo spirit constantly hungry always wanting more to eat but due to their insatiable hunger they contiuesly eat. And as a wendigo eats they get larger and larger. which is why i think that he may be possesed by some form of Wendigo. and according to Native folklore wendigo's Can infact infect others causing them to become a wendigo as well. similar to tails (even though he multiplies) I'll continue looking into my theory to see if there's a better fit or if my theory is right. Side note appearently wendigo's will kidnap people and force them to undergo cannibalism which allows another wendigo to form which could explain why sonic was missing.
