the only way that i can think of really beating osu! is completing a year of osu! maps, other than that it's very time consuming to catch up to this year's maps (i didnt watch the video yet this is solely based on the title of the video)

In my opinion "beating osu" is subjective, unlike the other games like minecraft for example, the game has an final boss and an ending. But on osu there isn't really any ending to the game, or a final boss. In my eyes everyone who has set a 1k pp score has beaten the game.
