Hey Nick. Try pickling a piece of the Swordfish. 2 cups white vinegar, 1 cup of water, 2 tablespoons of pickling spice, 1 teaspoon of ground clove, 1 teaspoon of ground mustard, 1.5 cups of sugar. Heat up mixture to barely boil and then cool. Cube fish up into bite size pieces. Slice up(thin) 1 sweet onion. In mason jar, layer the fish cubes and then onion slices until jar is nearly full. pour cooled mixture into the jar. Put on lid and let site for 2 days, then enjoy.

We do the same with Venison, dove and duck. Grilled over pecan and mesquite wood coals. No honey but home made jalapeño jelly warmed up to get the consistency of a dipping sauce. It is mouth watering good stuff. Also, If you have never spatchcocked a turkey or chicken on the traeger you are missing out!
