Al Pastor is typically pork, it was invented by Lebanese immigrants who came to Mexico and wanted to make lamb schwarma but pork was a much more readily available meat in Mexico so they pivoted. This is also why it is cooked on a vertical spit, much like lamb schwarma in Lebanon and it's surrounding neighbors.

I doubt the Lebanese invented it, they definitely inspired it, but pork in an adobo marinade is 100% Mexican (cochinita pibil). The trompo (schwarma) is a Middle Eastern cooking method tho.

Awesome video, even without editing, lighting, multiple camera angles, etc. Just chill. When I was young and traveled to other countries with my Mom, she taught us to find a driver that was trust worthy and have him take us to places that the locals would go. In the US, we get in the car and just drive to all the places we don’t have here on Guam. It’s an experience.

My partner and I also go to the grocery stores or farmers markets in a new place. When we first arrived in Perth we literally spent 3 hours wandering through woolies. A couple things: Al Pastor is typically pork, the paler green salsa is most likely avocado salsa, and tongue is called lengua, pronounced like len-gwa. That was 3 things, sorry! To make up for it, I'll ask a question: did you manage to find any foods that were unlike anything you've had before, or that which have given you some inspiration for a new dish?

Al pastor is usually pork. It's an adaptation from Lebanese immigrants to Mexico who did use lamb. Pork is a lot cheaper in the area, though, so the standing rotisserie method was changed to use pork. The big spit of meat is called a "trompo," which means "top."

This is why I always carry unscented baby wipes. Eating this meal in a car baby wipes are a must. I'm a professional. Taco's were mini so not too off the charts to eat. Years ago i would never thought I'd enjoy content of people eating in a car while chatting. But it really works. Hope the jet lag isn't too bad

We took our kids (and my daughters Bf of 10 years) to P.V. Mexico for 8 days so, while their Dad and I have health issues, I wanted them to know where we scattered their beloved Nana and her husbands ashes in case they wanted to visit them! The taco's were astounding, as was the food at the all inclusive resort, It was a bit annoying knowing they went out for lunch daily but they took drinks, fruit, and baked goods, then met us for dinner! and cards every evening! We are blessed with several Chef friends and the joy they derive from cooking for each other, is lovely, and we love shareing experiences with them

Just a quick clarification, I believe Andy has mentioned this before and just got very excited over the tacos or I heard incorrectly. El pastor is typically pork with pineapple cooked on a vertical rotating rotisserie stake. The beef and lamb mixture Andy mentioned is the Mediterranean and Lebanese version. Lastly, tongue in Spanish is Lengua! Which is usually made with cow tongue! Very tasty if you find a place that cooks down the tongue a long time to tenderize and soften the muscle. It takes like pulled pork or beef!

Gualaguetza in LA is a must try. Authentic Oaxaca spot known for it's mole. Leaving LA without trying it is a big mistake. I have traveled America a lot, and I think Gualaguetza is the best restaurant in the entire country.

Person who asked question about the dishwasher bluntening those knives. Yes our global knives get hammered by the dishwasher, I got my knives professionally sharpened and the first thing he said to me on picking them up was - Don't put your knives in the dishwasher! Have never done e it since and the edge on the knives are far better and less sharpening needed. Pretty sure I remember a dishwasher tablet packet said not to put your good chef knives in the dishwasher, but cutlery is fine.

On the boning video, I have a feeling it would be accepted on KZbin these days, I've seen several others e.g. the Bearded Butchers do tons of that content without getting slapped by the ban hammer. Would be interesting to see how you'd do it as I've come to understand breakdowns are done a bit differently in various regions depending on preferred cuts.
