Our Version of Mountain Man Breakfast

Humboldt Outdoorsman Special
Ingredients:
1 lb. bacon - diced
1 lb. sausage - crumbled
1 medium yellow onion - diced
1 red bell pepper - diced
1 yellow bell pepper - diced
1 orange bell pepper - diced
2 lbs. medium potatoes - diced
1 tbs. seasoning - Montreal Steak Seasoning
12 eggs - beaten
1 lb. sharp cheddar cheese -- grated
Directions:
Place ½ chimney of briquettes under a 14" oven.
Cook the sausage, crumble and set aside.
Brown the diced bacon.
Add the diced onions and cook until they start to turn translucent.
Add bell peppers and cook for 10 minutes.
Add one ring of briquettes onto the lid.
Add diced potatoes and seasoning and cook until potatoes start to brown, stirring occasionally.
Reduce bottom heat to 1 loose ring of briquettes. (approximately 14)
Tamp down the potato mixture and pour eggs over the compressed mixture.
As eggs begin to cook, sprinkle crumbled sausage onto the egg mixture.
When eggs are cooked sprinkle the cheese over the eggs and cook until melted.

Loved that Samoa Cookhouse! Miss all those wonderful Pies as well! When visiting Eureka California, the Samoa Cookhouse west of Eureka is a must visit. This is not a fancy place, it is a camper vacationers delight with Picnic tables and Great food. They are not stingy with it either. Save room for their pie, it is GREAT!! It is an old Lumber Mill operation!

Years ago, my neighbour taught me to burn off the skins of green and red bell peppers over a charcoal fire. That really increased the flavour of any meal.

I love your recipe. It's more elaborate than what we've been doing in our Scout troop for the last twenty years, and that's good. One comment as an aside: if you're going to place a ground sheet on the outside of your tent, please be advised that by extending it out from the sides, in all likelihood during a heavy rain, a whole lot of water will puddle up right between the tent bottom and the groundcloth. To help avoid this, fold the sides under the tent so nothing's sticking out. Eat well (and stay dry)!

I use mine just about every day, bought a 8qt four years ago, the more you use the better the thing gets. I use the lid for a griddle pan cakes and eggs. Charcoal is fairly cheap. This morning I made Biscuits in it, some bacon grease to make gravy with some sausage . It was just a little chilly this morning, around 49 when I got up. Fall is coming.

Typically, this high calorie meal was meant to sustain a hard working loggers, outdoorsman/hunters. for hours throughout the day. We cook it, eat it, (and usually it's on a weekend) so we just kick back and relax......until dinner time......... thanks for the shout out. OCIC

This recipe is uncannily similar to a breakfast I've been making for about 15 years now, but in a 20" steel frying pan over a wood fire. Your folks must not have much of an appetite though--I use 4 lb bacon, 1 lb sweet sausage and at least two dozen eggs along with everything else. Altogether it's about 14-15 lbs. Just last weekend I made it for 13 people, and there wasn't enough for anyone to have seconds (and they wanted to!).

@ Jim Kellam: to cook over the open flame you need to get your wood to burn down enough to keep a steady, medium heat. I would use a grate or wire grill to elevate the pot above your heat source, and feed the fire with smaller pieces of wood which could be easily broken up and scattered around beneath it. Your coals should glow and continue to burn up when placed on/around/or underneath. If you see the video description below the recipe, you'll see we did use more than a few coals on top/bottom as you will need to get a temperature of 325-350 F to cook the mixture sufficiently. Also, the meat has already been cooked before it was added in. Joanie OCIC

James, we usually start a chimney full of coals before we cook. This gives them time to burn enough and get hot for adding on to the cast iron. Once we do the count out of coals, we keep them handy/hot to adjust & replace as needed. So, start 'em up first, prep your wares, & voila....ready in about 10 -15min. OCIC

That right there is fit for a king to eat.I love cooking in cast iron.I collect the older cast iron cookware my favorite is the Birmingham Stove and Range Red Mountain series.I also collect the Lodge advertising skillets,I have about 50 or so of those.My other collections I have over a 100 pieces of cast iron,names like older 1notch and 3notch Lodge,Wagner,Griswold,and etc.It took me over 3 years but I managed to get all the Birmingham Stove and Range Red Mountain series skillet set.Really enjoy your videos. Everything taste so much better cooked in cast iron.

I've been making this meal for 25+ years. how ever i add milk and the cheese(velveta for best results, slices or block work) to the eggs, and i mix it together as i'm cooking the eggs in. my trick is the milk which allows you to leave it just slightly damp(not cooked dry) so it is super creamy/cheesy. absolutely to die for. great vid, makes me hungry for that meal lol thanks

If you are preparing this by yourself outdoors I'd set aside 90-120 minutes for prep and cook on site: fry up sausage/bacon, crumble/dice, cut up onions, potatoes & peppers, crack a dozen eggs, grate a pound of cheese, layering & coal start, cook, etc. Joanie OCIC

@@outdoorcastironcook Its obvious the sausage was cooked to me, but when teaching cooking to people, its best to be very clear, as the video was on every other aspect, regardless, I'm going to try it sometime, but I'll do it with uncooked sausage at the beginning instead of the end.

I made this over the weekend but I added squash with the potatoes and used my own mix of seasonings. It was very good. I also made some biscuits in my cast iron skillet. It was the best breakfast I've had in a long time.

I don't have a Dutch Oven yet. It's on the to do list. Whatever it is you are doing, turn the camera, zoom, love when you show the technique. especially simple things. I made this breakfast at a football tailgate last weekend, and had a line of people wanting to try it. Everything turned out great and the dutch oven was cleaned out quickly.

The protein in eggs will bind to starches like potatoes so that's why he had to tamp down the potatoes so there wasn't a porous surface...if you ever try to add uncooked eggs to loose hash browns in a pan they'll just stick to the potatoes and make a mess and you won't have anything left that looks like scrambled eggs.

@born68 Absolutely amazing that you took the time to respond and that you make a dish called an omlet that is just like this!!! It never takes us 3 hours to do this recipe, but prep and cooking times vary from human to human. We make a skillet egg dish which you cook like a pancake, add ingredients to the middle and fold it over, We call THAT an omelet (or omelette). ;) Congratulations to you also.
