Make Ahead Breakfast Casserole for the Holidays or Anyday

One tip that I have when baking bacon in the oven I put the trays in when the oven is cold not preheated. The reason for this is it tends to melt the fat more slowly and allows the bacon to cook slower and develops a lovely crisp in approximately 30mins and no need to turn it and it’s super easy to save the bacon fat and it’s delicious in bread rolls etc. I’m in Toronto, Ontario, Canada and a new grandma. 🥰❤️🙏🏻🇨🇦🍁

Hi Colleen! If the word casserole is in the title, I am a happy human! I have a few breakfast casseroles I make but not this one. Love that it freezes and can be made the night before. Nevermind the fact ingrediants could be substituted to what I have on hand! Win, win. I also appreciate your dry humour lol. Those are the moments I am grateful I don't have a mouthful of coffee 😂. I've never commented on it, but I cringe a little with shifting cutting boards because it can be an accident waiting to happen. It's sweet that your niece is living with you. I miss having youngsters in the home too

We do something similar on boxing day with all the leftovers. I add bread cubes, potatoes, turkey, stuffing, brussel sprouts, basically anything left from christmas dinner lol

A neat trick for getting the excess fat out of your sausage is to take a piece of paper towel in your tongs and swirl it around in your frying pan to sop up the grease. Then just throw it away. ( since pouring it down the sink, as some folks do, will eventually cause drainage problems in your plumbing). This recipe sounds great. Im just not sure i could get our gang to give up on their traditional bacon, eggs and pancakes Christmas breakfast. Lol.

Good question! I don't know because I have always cooked it. I have no experience freezing raw eggs. Maybe someone else on the channel has that information?

Are those Sweet Potatoes or Yams? I believe in the US or maybe other countries they are called sweet potatoes but for me living in Canada we call them Yams.

Hi Cheryl, In our grocery stores here in BC we have both sweet potatoes and yams. Sweet potatoes are generally more orange while yams are paler. Cheers, Colleen

I make similar make ahead casseroles and just put the casserole into a cold oven and the dish heats withe the oven. Just add 5 minutes cook time when you put it in the oven.

Yes, definitely! I freeze those little foil containers full and my husband takes them out of the freezer as he needs them to restock the fridge in his big truck.
