My mom had an amazing go to recipie that is super easy. Mix 1 cup mayo with, 1 cup grated Parmesan cheese (green can type works or fancy type) and 1 cup green onion chopped. spread mixture on individual sliced sourdough baguette pieces (or bigger bread slices cut smaller). Put on cookie sheet, Bake in oven 375 degrees for 5 to 10 minutes (until golden and bubbley). We called them onion breads. Super yummy and easy!

I have a appetizer recipe that was passed down to me. It’s called a taco dip. You can either use one pack of cream cheese, one can of Hormel chili with beans and one bag of mild cheddar cheese first of all you melt the cream cheese in the microwave for a few minutes and pad it down, then you add the Hormel chili on top of that and then you put the cheese on top and put it back into microwave until it’s melted. It’s fast recipe and I found it. Lots of people love it.

Another that a chef friend of mine makes.Lay out a sheet of plastic wrap.Cover with a rectangle of smoked salmon. Spread a layer of cream cheese mixed with finely chopped shallots and fresh dill.Roll up jellyroll style and freeze. Before serving remove from freezer and stice thin rounds and serve on bagel slices cut into small diagonal rounds.decorate with a small feather of fresh dill and 3 capers.(a small amount of cream cheese on the bagel will stabilize the presentation) Your guests will be suitably impressed. Delicious !

My mother-in-law used to take a piece of lunch meat, spread whipped cream cheese in the center and would wrap that around a spring green onion. It was fast, easy and always was eaten first!

Crockpot mushrooms are always a winner. This recipe doubled works well for a 5-6qt crockpot. 1lb mushrooms, 1 packet of dry ranch dressing, 1 stick of butter. Melt butter, add dressing. Put cleaned mushrooms in crockpot, pour butter-dressing over. Cook on high for 2 hours; stir once or twice. Can cook on low for 4 hours.

I will definitely have to try these. I knew a lady that had her own catering business, and she had a recipe that I just love. The ingredients are captain wafers, prosciutto or thinly sliced bacon and parmesan cheese. I always use bacon as I can't afford the other one. Stretch the bacon length wise and cut in half, then wrap a piece around the middle of a captain wafer (it will look like a bowtie), bake at 350 degrees F until the cracker starts to brown and bacon is done, immediately remove from the oven and sprinkle the parmesan cheese on top (as much as you like), eat while warm.

My best chicken salad recipe: 1 cup of leftover rotisserie chicken diced, 1/2 cup fresh oregano diced small (yes it must be fresh, dried just won't do), and just enough mayonnaise to tie it all together. Have always made the cream cheese spread using canned salmon. Packed it into a little brown glazed pottery jar (you used to see them in stores packed with a certain kind of cheese spread; hard to find them now). My daughter & I fill & pass them back n forth around the Holidays. Delicious! Great spread on party rye bread topped with thinly sliced red onions. We call it: Poor man's lox! (Mix in few drops smoke flavoring=Poor man's smoked salmon) Makes a really good simple appetizer for Holidays.

All 3 of these look great. I am going to make the salami ones, but I am going to try pepperoni too.

These all look scrumptious, Colleen! I like how the salami edges curled up. Looks cute! I bet the garlic blue cheese, minus the blue cheese maybe, would be also good with a pasta dish as welll. Almost like garlic gnots. Sadly, I am not a fan of blue cheese, or goat cheese either..LOL. I've never looked for flaked ham, so not sure I can get it here in northern NY. Maybe potted meat would work, although it's ground ham and spices, so not sure. I'll look for the flaked ham first though, because that one looks amazing! Thank your friend Lil for sharing her two recipes! So kind of her! And thank you, for sharing them with us!

Hello, thank you so much! I am not a fan of goat cheese either but I really enjoy blue cheese. The salami can be substituted with pepperoni as well and it gets really crisp after the fat cooks away. I hope you enjoy the recipes and continue watching into 2023! Best wishes, Colleen

I just ran across this video so I am offering a solution to the flaked ham maybe too late, but here goes. I would put some chunks off a regular ham you had cooked and give it a whirr in a mini chopper or food processor to the desired "flakiness". If you do not have a ham you could ask the man in the deli to give you a slice of ham aprox. 3/4 to 1 inch thick, cut that in chunks and give it a whirr. I hope this helps you with this recipe.
