Hey everyone!
I managed to pull together another what we eat in a week for you guys, I always say I liken it to flicking through a recipe book! A snippet of meals without too much detail so you can just watch it go by and perhaps get some inspiration :D

Always enjoy these videos. I no longer cook large family meals so I enjoy watching you try different things. Learning to cook for one has been a challenge in itself, but I still like to try new things now and then. We always had corn bread with brown beans cooked with bacon or pork, onions, sometimes relish and fried potatoes. Southern cooking at its best. Corn bread is good with canned corn added in and some cheddar cheese. Just make sure you preheat your iron skillet with grease to make a lovely bottom crust! Now some advice from an old lady, don't be so hard on yourself. You do a wonderful job taking care of your family. Pretty amazing I think!

Another great video - I'm sure this is attached to the wrong video but I saw you making your french fries (chips) and this might be easier for you. You'll need a pot of well salted boiling water (no lid) cut your potatoes and blanch them. You will need to work out the timing depending on the potato. I usually use russet or yukon gold potatoes, blanch in boiling water for about 8 minutes, put them on a rack above a sheet pan; dry them off a quick freeze them. The purpose of the first cook is to cook the interior of the potato without coloring the outside, remove some of the starch. They have to be cooked long enough not to oxidize after the first cook. Once they are frozen you can bag them up and either fry them (about 2 or so minutes at 375 degrees. I have a small countertop deep fryer, but this works in a shallow fry as well. If you want to bake them, you need about 1 tsp of cornstarch to 1/2 of a gallon bag of fries to pull moisture and starch out, then sheet pan, spray with oil and bake until they are the consistency you like. This also works with sweet potatoes, zuchini and pumpkin. Mine rarely make it to the freezer; I just put them in the fridge and cook the same night I make them. I season them before if they are going to the oven and after if they go into the fryer. I found that dehydrated tomato powder gives them a little ketchup taste without actually having ketchup and you can always whip up a dipping sauce of some kind to serve on the side. Many blessings

I am going have a go of the cabbage pancakes tonight, all the food looks so good. I am also going to look up a teriyaki marinade, yum yum. So much good food in this video ❤ Also I should put cornflour in the teriyaki mix to tenderise the chicken?
@OurSmallFootprint
@OurSmallFootprint Жыл бұрын
Sorry, I'm late on comments! Cornflour can be used to 'velvet' meat, so if you have cornflour in your marinade it will theoretically tenderise the meat, but realistically, chicken doesn't need much in the way of tenderising! It also depends on how you want that marinade to cook up, if it has cornflour in it its going to go very thick too.
