I am from West Bengal, in my Ancestral village, my Grandfather used to have those Elephant foot Yam in his backyard, we used to eat them fried, in fish curry, and sour curry, it tastes like potatoes but with texture, slightly sweet, or not based on your palate, in Kolkata fried chips are done from these, very spicy, but in India, especially in South India, they have these in Mutton curry, I once cooked it with mutton, it tasted heavenly, better than potatoes really, once in gravy....you can also have it boiled, smashed with Mustard oil and onion diced and chillies, they have it like this West Bengal. It called Ool in Bengali, there is another cousin of this ,smaller variety and slimmy called Kochu in Bengali, and another more exotic cousin is Metey Aloo....its a larger root more like Elephant foot also used in curry ,and boiled.....👌👌

We call the elephant foot yam "Chena" in Kerala and it is very commonly cultivated too. One thing though, cutting the skin is a pain as it makes your hands itch like no one's business. Very yum, so worth the trouble.

Use any oil preferably coconut oil with salt on your hands while cutting the outer skin n put the pieces in slightly salted turmeric water...After cutting wash hands thoroughly because some itch more than others...Chena ,yam or Suran whatever the name , It's such a versatile tasty vegetable whether used as moru ozhucha curry ,avial,uperi or kaalan 💞☺️Some even use it in Sambar 🙏

4:15 Elephant foot yams are actually quite itchy. It's fibres contain calcium oxalate crystals, which causes an itching sensation on fingertips(if eaten with hand) and pricking at the back of throat. Not a pleasurable experience at all. But sometimes people do love these sensations, kind of like the relationship humans have with chillies. In short, it has a taste of it's own, very unique

That's why (ie to take out the itchy feel) they fry the cube cut variety before cooking them with mutton. Alternatively, the cut yams are soaked in tamarind water mixed with turmeric powder to remove the itchy sensation while eating.

It's a pretty common vegetable cooked in most homes. We call it chenai in the south, suran in the north. Also if you EVER get around to watching Bawarchi, you'll see one of the reasons it became so famous 😂. I'm not giving anything else away, watch Bawarchi!!

Yummiest ever when made gravy..curry .. fried whatever dish made with yam is justtt mouthwatering. Elephant foot Yam is two types one will be yellow inside and another one is pinkish. We call it as senaikizhangu in Tamil ❤️

Also mixing dal or any gravy with rice is an ART in getting just the right proportion of rice to gravy so that it's perfect! Most Indians will fully mix the dal/sambar into the rice before they start eating, and then take a bit of the vegetables or meat in each bite.

Its very common one in the southern part...we simply fry it like how we do potatoes and add salt and chilly powder. ... sometime keep it as sides or fryum...

Elephant foot yam is a common vegetable in south India. You can make all types of dishes, fries or curry or stir fry.

I am also from Himachal. It is called zibikand जीविकन्द in here. You can also find it in winter season. It also grow in Himachal Pradesh. if you don't eat it yet please try it, its very delicious vegetable if you know how to make it correctly

It tastes yummy. This is mostly eaten more by southindians. We make roast with it tastes like fish fry, curries are made with it im kerala. North indians too use it they call it suran and make kebabs/sabjis with it i guess!

it's groing likr pottatto but its so huge... if you are familier with aviyal and sambar we used toput that... I also love small onion with elephant foot yam theeyal(its rosted cocutnut with spices and spicy and after granted something like paste, no garam masala, hope its kerala special).. also corriader leaf not mostly use in alpy, but in biriyani use now a days, but mostly am a home ccoking person, cooriander we use only for our fish curry and the currey i mentioned, no other places, leaf we never.. its mostly north side, but we use spinich, muringa leaf, lots of curry leaf(it's lots in my home on my garden), Amaranthus viridis(i got this from google) this is some kind of spinich but if too Bitterness so we cant eat.. but little bit i can, my kitchen side its there, usually its not gardening thing but unusually hrere and there we get it... may be i can prepare that today :)

Yam has texture closer to potato than anything but it's denser than potato and tastes closer to it, has it's own unique flavour to it that neither potatoes nor sweet potatoes has, but a little bit of sweetness to it depending on how it's cooked. It's really prevalent in south India. The yam is best for it's fries.

Boil put tangy mustard oil chopped green chillis paste of mustard lemon juice salt and smash to make a dough.... Mix it with hot rice.... U will be living it. Rich in minerals and iron

It is mostly a South Indian thing. It is considered impolite to partially mix rice and sambar. The ideal thing to do is to split your rice pile and mix it with the proper amount of sambar. And move on to the next pile once done and make a little well for the rasam.

In Karnataka itta calledj suvarna gedde. It's pretty sweet and has a mild astringent flavours. If it's not fully cooked it burns your tongue. Normally in my house we justo cook it with a simple tempering of curry leaves chillies and mustard Along with coconut

In India, some kitchen of Holy Hindu temples ( like Puri Jagannath of Orissa) consider yam as sacred and substitute for potatoes as they believe potatoes are brought by Portuguese people in India ( foreign food) .

There are many types of elephant foot some of them itech while pilling and while eating and some them don't buy They are to much testy when made with curry like gravy. Elephant foot grow inside the ground.

Elephant yam is available in US Indian stores frozen (I know it doesn't taste as good as the real thing). Sometimes it's called a different name, Suran. It can be dangerous if you don't cook it properly.
