Just found your channel today. I remember when I was a child, I am 70something, seeing my grandmother take dried beans out of the oven in canning jars like you just did. I have never seen this method of preserving food before. It is quite interesting. I guess the only drawback about this way of storing your food is you are limited in size..like quart size jars as opposed to putting your dry foods into large sealed pails which can hold more. Regardless I think Im gonna try it on some of my foods like rice! Glad you made the video, thank you so much

+Christine Strauss we have a neighbor who is allergic to the black walnut trees so she never uses the nuts. My father told me how difficult they were to use. Something about curing...Is it not worth the bother? I don't plan to open a nut factory. I just like trying new things at least once.

What a great idea! THANK YOU for posting! I think I will use this method for my dry beans and rice and barley, etc. However, I use a lot of flour (~200#/year), and don't want too much dryness there. Right now I just freeze it in its packaging for a week after I bring it home, then transfer it into any hard sealable container, with no further processing until I cook with it. Freezing kills any weevil eggs; hard sealable containers (jars, etc) keep out any vermin. Thanks again for posting this!

I tried this system, a couple of times, and it is awesome. I still struggle with buying in smaller quantities. I had a large family but now, other than holidays and an occasional weekend, it is just my husband and me. I can put things in sizes we will use for a meal or within the week. I love it! I still freeze it first..the only thing I noticed with the flour..was that A) it was extra dry and recipes needed about 10% extra liquid..and the flour had to be broken up either with a rolling pin in a baggie..or in the food processor! Other than that is was awesome!

I have a question and an idea. Now could you heat in the oven your jars like normal then add your dehydrated peppers and put both the lids, on some foil, and jars in the oven for say3- 5 minutes just to heat them up. then take them out and put the lids on the jars . They should seal , you could also put them upside down cover with a towel to slow cooling . Would that work ? It's something like the hot water over pickles in your other video. You could test it to see if worked. I don't can but am researching how to can different things so I can do so from my first garden this year because of the coming shortages.

I have not dry pack canned anything for the reasons you mentioned. Mylar bags are expensive, and the oxygen absorbers are too technical etc. But I have had it so heavy on my heart to put dry staples away for my large brood. This is an answer to prayer. keep up the good work.

Hi, Bev. I'm from Durban on the East Coast of South Africa xxx We are also prepping in order to evacuate our homes in case of anarchy. We put all the dry products for 2 weeks in the deep freezer in order to kill all nunu-eggs. Take out and let it thaw for 2 days. Transfer into 2 litre Cokebottels and stamp it until the bottles are full to the brim. Mark bottles with the date. Flour, rice, cornmeal, pasta, soup mix etc. Sugar and salt does not get put into deepfreeze. Glad I came across your channel xxx

Mrs. Vollfie, thanks for the info on oven canning powdered milk. That's exactly the info I was looking for. I've been doing flour and rice, and then after I get it out of the oven I put a lid on and let it cool for 24 hours. Then I put it in food grade buckets with some oxygen packs put a lid on and store it away till I need it. One reason for oven canning flour and rice is to kill the critters that will hatch in them eventually. Thanks again for the info on the pwdr. milk. God bless.

I have recently opened a jar of flour..it was blocky..I had to use a steak knife to break it up to get it out of the jar..BUT..once out of the jar..broke up easily and I am using it and it is absolutely fine!

Great video. My Great Grand Mother's & Grand Mother's all did oven canning. It also kills any bugs & their eggs in the flour or grains products!! On the dehydrated veggies... it has been my experience that oven canning only works if you place veggies in the hot jars immediately after jars come out of the oven use a coffee filter. I put a large coffee filter in the bottom of the hot jar with a pair of wooden chopsticks..funnel the veggies in & get the lid on....it will seal & veggies don't burn.

Im not sure about the pesticides. There aren't many organic farms around here so I am supposing he probably did. I usually store the beans in jars, then wash them just before using. I do my dill pickles this way. Pack jar tigh and when the outside edge turns avacodo green they are ready. Still crispy love love love them

So far so good! I opened a jar of lour..and it was mostly in a cake..but I dug into it wil a steak knife to break it up...then when I got it out of the jar I just put it in a bag and rolled over it with a rolling pin! DONE! as good as when I canned it!

I don't know about if you want to sprout them later..but if you want the for long tern storage for grinding..it should be OK..because youare heating the jar first..then baking them in the oven..so everything should be really dry?

+OurHalfAcreHomestead this method of canning has been the preferred method of doing dry stuff for many years in eastern europe. in 2009 i ate some bread in hungary that was made with flour that had been oven canned in 1978. they love to buy in bulk and i have heard stories there about whole villages buying all the flour for the year at one time from a mill just so they can get a great price and then each family dry cans their flour in big jars.

Hello Mrs. Wolfy (I thought I hear you say..) Wonderfull idea and good to see somebody trying it... great alternative to these complicated machines like vacuum sealers... I like machines (as a guy) but I hate them as a home planner...they consume power and if they fail or break down who can fix them ??? an oven is a lot lower in tech and can be fixed more easily... thanks, Sander.

I look at it this way..spaghetti sauce stains my old Tupperware..but I still use IT...BUT tomato stains are about the only one I WILL tolerate. But like you said..wash with soap and a bottle brush..rinse in bleach water..if the pink marks are still there..I wouldn't worry.

IO have since revised my decision on doing beans..navy beans and things like sugar and dehydrated goods..can be easily kept in dry jars with tight fitting lids.

I had no idea in the old days they use to can dry goods, we all just thought they put them in glass jars to see what they had..Can't wait to try this because I have ton's of boxes of rice and beans that I use to get through a food program but don't anymore and would like to keep them good as long as possible. ran across your video a few days ago, was impressed with the oven canning the way you did it, I tried it with rice this morning when I took out of oven the jar were very hot and proceeded like your video, I waited for a while and the caps didn't pop so I pushed them down and they stayed down I hope that means they are sealed can you comment I wanted to try rolled oats but don't know if it will dry them out to much, thanks

I read about this process in an article in Countryside and Small Stock Journal and I've been intriqued with the idea ever since, but haven't tried it yet. Cool beans that you've done a vid on it. It does seem to be a great, low-tech alternative to the mylar, O2 absorbers, and vacuum sealer route for folks. (P.S. I'm so excited for you come Tuesday, I can hardly stand it!)

I had a question regarding long term storage for sugar (brown and white), I'm assuming heat may melt it, so would you just vacuum pack it?

I freeze the flour in the bag for 4-7 days then what I don't can..I pour into the tote for baking..I have no idea if the tote is food grade..but the flour never stays in there long enough for it to be a concern..especially since it is a dry product...the freezing stop and bug eggs that are ( always present) in the flour for living. So I have never had a bug issue.

Oh ok I know what they are I have one of them. I keep it in the kitchen. I have two new knees which are great ! total new knees .Nope... :( I'm not bionic :( but!! my right hip and back are bad also. so I stand as long as I can and then i sit then I get up. back & forth its not as low as a kitchen chair. so its easier on my back,hip.. it use to help with my knees also. It depends on the jar..most plastic jars are no 100% air tight! I would use glass?

I think I would just toss them in a burlap sack to take off any excess dirt...were they sprayed with pesticides? If so then run them under COLD water quickly..pat them dry and lay them out on a dry sheet on the table and let them air dry..but the HAVE to be DRY before going in the jars. I hope this helps? I have never done pinto beans..so I hope I helped.

Herbal teas are delicate..and I would not try it..what I do with teas..is I vacuum seal them like flower..inside a paper bag then in the vacuum bag..or if you have a jar sealer..stuff the jar full...tuck a coffee filter in on top and vacuum seal it that way. Hope this helps?
