Peruvian-spiced chicken, roasted whole in the oven, and served with the most incredible green dipping sauce.

✅Ingredients
• 1 (3 to 4) pound whole chicken, giblets removed
• 3 tablespoons olive oil
• 2 limes, juiced
• 4 cloves garlic, crushed
• 1 tablespoon salt
• 1 tablespoon ground cumin
• 2 teaspoons paprika
• 2 teaspoons sugar
• 1 teaspoon black pepper
• 2 tablespoons butter, optional
✅Instructions
1️⃣ 00:00:12 - Preheat oven to 475 degrees.
2️⃣ 00:00:16 - Place the chicken on a roasting pan rack. In a small bowl, combine the olive oil, lime juice, garlic, salt, cumin, paprika, sugar, pepper, and oregano. Rub the outside of the chicken with some of the mixture. Use your fingers to loosen the skin around each end opening. Spoon some of the spice mixture under the skin so the flavors get in direct contact with the meat. Optional, use kitchen string to tie the drumsticks together.
3️⃣ 00:01:53 - Roast in the preheated oven for 20 minutes.
4️⃣ 00:02:00 - Reduce temperature to 350 degrees. Place butter on top of chicken (optional). Continue roasting until chicken reaches an internal temperature of 165 degrees, about 1 hour, 15 minutes. Baste the chicken periodically for maximum moisture.
5️⃣ 00:03:35 - Let chicken rest for 10 to 15 minutes before cutting and serving. Serve hot with Peruvian Dipping Sauce.
Peruvian Green Dipping Sauce:
✅Ingredients
• 1 cup fresh cilantro loosely packed
• 1 to 2 jalapenos
• 1 tablespoons aji Amarillo paste*
• 2 tablespoons grated cotija cheese**
• 1 clove minced
• 1 tablespoon olive oil
• 1 tablespoon lime juice
• 1 teaspoon white vinegar
• 1/2 cup mayonnaise
• 1/8 teaspoon salt
✅Instructions
1️⃣ 00:02:19 - Combine all ingredients in a food processor or blender. Puree. Store in refrigerator until ready to serve.

Wow! I made this exactly and it was delicious! I then deboned the chicken after we ate dinner and used left over chicken in juices to make chicken taco dinner later in week. I then made bone broth from the whole chicken bone and used this for chicken tortilla soup stock using same rub for a few chicken breast I shredded. I would have used left over chicken from the whole chicken but didn’t think I had enough. This entire week of recipes was amazing and my family loved all of it! Thank you!,❤️

I made the Peruvian Chicken two times before making the green sauce. It was good but now the green sauce the highlight of the meal!! I look forward to the green sauce!

I love the idea you’re making something Peruvian, this recipe is great, but it could be even better if you replace jalapeños for rocoto pepper or whole Aji amarillo, we don’t use jalapeños in Peruvian cuisine. You can find those chilies in any Mexican or Latino store or online as you found the aji amarillo paste. Another thing is that we don’t use Cotija, highly recommended to use Queso fresco. Other than that great recipe. This is not a food critic is just a suggestion.

I'm not especially fond of Cotija cheese and the store didn't have it so I bought Queso Fresco. Did the same last time I made it...

Thanks for the peruvian recipe. It is nice to see that more people like peruvian food:). Some clarifications: in Peru we don't use jalapeño in our recipes, we use rocoto peruano. Second don't use that cheese, we use simple fresh cheese. Third we don't use paprika we use red Chilli. You can find those products easily in Latin markets or Amazon. Thanks again and I hope you can try those changes.

Made it and it's super delicious. Ordered the Aji amarillo to make it better next time. I used an instant pot for 30 min and worked really well. I always had this with tacu tacu and wish you would explore that recipe too. Maybe a baked version or something would be cool. Thank you

Typical peruvian dishes usually have roasted potatoes and or rice and make sure ur rice is made w caramelizada onions and garlic! 🇵🇪

Have anyone tried this recipe with a turkey instead? Off course, more ingredient amount and cooking time would be needed.

Hey thanks for sharing one of our dishes. But it is misleading to use jalapeños since SouthAmerica Cousine don't uses jalapeños at all. We have our own set of hot peppers from The Andes. Next time make sure to clarify what are the real ingredients and then let the public know what is a good substitute right here in The States.

That is nothing like Peruvian style roast chicken. Firstly, no one in Peru uses olive oil to marinate chicken, neither paprika. They use “aji panca” instead of paprika. Cumin is not used for chicken only pepper, instead of lemon they use white or red wine vinegar. Chicken is usually cooked on the spit rotisserie NOT in the oven. Please don’t call it Peruvian style when is not.
