The kitchen’s now blocked doorway may originally have made sense. In the 17th and 18th century a large kitchen opened to a kitchen garden where herbs and possibly some vegetables were grown. If the nuns who were cooking needed parsley or thyme, they need only step out the door to get it.

Also kitchen refuse was buried off kitchen. With old Historical properties , it is interesting to dig outside in the ground off kitchens. Broken pottery , utensils etc would get buried , bottles etc. Then it is fun to date things . A project ten years down the road. Lol

Before you put down the floor, make sure you run electric to the columns. You WILL need it at some time for at least a few columns to run blenders etc on the islands connected to these columns. it is a minor chore and expense when the floor Is torn up and will make a Huge difference

Love the kitchen floor tiles and can’t wait for the sandblasting and kitchen design. Are you also getting the kitchen storage room designed at the same time? May be useful for storage layout and fridge and freezer positioning if seperate from the kitchen. Also provision for a drinks fridge and wine storage.

Not sure if the idea of using the covenant as a cooking school has been suggested. It’d be a great use of the large kitchen, the gardens could grow local produce, and there is plenty of room for students to stay.

I love the idea of a longer window as opposed to a door. Oh, I love the flooring as well....very attractive for such a grand kitchen! Good buddies continue to do the job!

Include beam placement in the floor plan, so if you put in support columns the designer can include that as an option. Plus work with/around them. Very exciting. Love the flooring choice.

I must say Billy after you get the beams sandblasted, and the granite fireplace completed. The kitchen is going to look magnificent. Especially travertine and black marble floor. Billy: The cook wouldn’t want to fight everyone else, while preparing meals, for deliveries and incidentals and eaters. That door may solve traffic flow issues.

I love the flooring! I was sort of mourning the loss of that checkerboard tile in part of the kitchen but this is much better. Excellent choice. This is your place dear Billy. Don’t let your audience cause you any distress in your decisions. You have excellent taste and sense of what you want. God bless all you hard working men!

Love the new flooring pattern. A new window where the door used to be is a great idea. I love the wood beams on the ceiling, also the stone fireplace 👍☺️🇫🇷🇺🇸

Beautiful flooring! I also love that you are using free standing cupboards. It will make the kitchen true to the period and more versatile. So fun to see you transform the space with such care and respect.

I was anxious to see those massive ceiling beams. They don't look bad.. now to see them after the sandblasting. This project is amazing to see the "guts" of this very old building.

Billy discuss this issue with restrooms. I believe it was the video before they actually started demolition in the kitchen . Billy has the restrooms they need to be updated.

Marbles or ball bearings. Get a bucket of either and then after the floor is poured you pour them out. The marbles/balls will naturally gather in any low spots. If they stay fairly scattered, you know your're level. Any gatherings, and you have dips or high spots.

Full size window going in - yay! And that FLOOR!!! The floor choice is fantastic! This may be my favorite kitchen reno video of yours yet. It's like we passed through a real "doorway" today. LOL I feel 100% certain you made the correct choice not to put the door back - with a kitchen door it would be too much foot traffic in the busy kitchen - maybe back in the day was practical, but nowadays...eh...(and don't forget to indicate where the ceiling beams are on the floorplan for the designer)

You are moving through this demolition process very quickly. It certainly wasn’t the easiest space to do with its size and thickness of the walls, nails in beams, etc. Sean is an easy going champion and someone I think we would all like to have work for us. The floors are beautiful. Happy you got your truck back!!! xx

I can imagine the old kitchen as a great concert hall or rental venue. It’s going to be gorgeous with the flooring you’ve chosen. Just gorgeous. I can imagine a beautiful fire burning in the fireplace.

Please reconsider covering the walls with plaster board and insulation. Why not make use of the high thermal mass of the stone walls? The room will be slower to warm, but once warm, it will stay warm for longer. The stone also has a much nicer aesthetic.

I recommend the same! Never put plasterboard on old walls. This will be desaster for their health! They really shouldn't do that !

Very cool charging device. Every time I see a wind turbine like the one in the beginning of your video, I get very excited as the proud mother of a grown daughter who is able to repair those and repel down afterwards. She’s very mechanically inclined like my father as as a lover of windmills (Dutch ancestry too), he would have been delighted!

For the dust in your light, take it outside and use an air compressor on it. It will come up clean as new. Don’t use too high of a setting on the compressor, don’t want to damage anything. It works great for me for many things….the air compressor I mean! Have a great day. Cheers! 😊🇨🇦

I can't say about the budget but it seems that you're right on schedule Billy. Not behind at all! Well done! I love that you are putting the larger window in rather than another door in keeping with the original plan and symmetry of the building! Well done again!! Here in USA we would call that outside and dots. When I set tile in the 70s I would use hand made Spanish tile, 8, 10 or 12 inch Terra cotta with decorative "dots" of hand painted glazed tiles in the corners. When finished it would (to me), seem as carpet and art.

Over on Phil's channel he mentioned you had some trees down in the storm. He came out pretty well, too. We had a major storm this weekend in the SF Bay Area, our birdbath blew over and shattered, lots of debris, winds were 60-99 MPH. We have had a major winter this year for the first time in many years. I love the kitchen, can't wait to see it. You guys are truly amazing with what you can do. Happy Martin Luther King, Jr. Day!

Great video as always! Totally agree with converting the blocked up old doorway to a window. You could open the central window on the opposite wall a a door way to the garden space on the opposite side to the courtyard for alfresco dining, this would also give you the chance to reuse the stone window sill on the newly opened window space….

10:10 you're better off bringing in a concrete floor grinder to knock down high spots across the whole floor. Looks cool when done, too.

It depends on how fast you can get fuel versus waiting on a charge. In bad weather this could be tough.

We save upto 80% compared to fuel from charging at home, obviously solar is the way and some electric cars have over 700mile range.

We have 3 EVs plus electric motorbike and e-bikes on our farm in Wales. A lot of the charging is from solar (for several months of the year all vehicle charging and large farmhouse is from solar). We save a lot of money each year, before we even think about the environmental and driving experience benefits. No twice-weekly trip to nearest petrol station either (7 miles away).

If you're going to try to resell this as a chateau like home, then absolutely there should be a door from the kitchen into the courtyard. That's a must.

The wall finishes need to be able to be cleaned of oil or grease and be made sterile for a commercial kitchen facility. Please keep that in mind as you do wall finishes.

I had to make another comment when I saw your proposed flooring for the kitchen…unbelievable but that is the same floor I put in my bathroom a few years ago. I love it and have had a lot of positive comments. I will say, though, my tile installer wasn’t real happy when he realized how many cuts it was going to take on the installation! 😜

Before you pour any new floors, you may need to install underground electric, plumbing and gas for the updated appliances. Unless that is prohibited by local regulations.

The kitchen would make a nice restaurant with the kitchen open for people to enjoy watching the chefs at work. The huge fireplace in the dining end of the room. Lovely chandeliers hanging from those beautiful beams. I'm sure that the community would enjoy coming there because of the history of that building. So many lovely ideas and thoughts about this project. So much work but at the same time how fun to imagine the possibilities. Part of the building hotel, apartments, restaurant and event center. And the gardens!!!! That is another story altogether. 😏

Billy - we laid 100 square metres of travertine natural stone 40cm x 40cm by 30mm outside around our house and pool and it’s a lovely product. Just make sure you budget your sealing product - especially in a high traffic area like a kitchen - as it tends to be a little pricey. It will look amazing mate. Can’t wait to see it 👍

Thank you for the posting on the Electric-Car-Jerry Can. Here in the states, there are so many who are fighting anything green. They used the winter storm that hit us recently as a reason not to get an electric car. Saying the battery runs out and leaves you unable to heat your car when you're stranded in the snow. They didn't stop to think that diesel/petrol cars run out of gas and leave you without fuel to heat your car. The first person I have to convince to use solar is my son who I live with. I'm working on it! Your post will help.

Be sure to consider all plumbing and electrical requirements before leveling/finishing floor in case you need to put utilities in floor

That Eco Flow charger, would be great in Australia where cities & towns which are far & few in between from West to East at the bottom end, top end & in between also of Australia with an electric vehicles as there are not many changing stations around these isolated areas which is all desert. Have enjoyed watching your renovations of the convent & the chateau ( you guys work very hard & having fun at the same time).😊 Well done Billie & co workers.😊

How about 2 super large islands for the kitchen? The first housing 2 sinks on opposing sides, double ovens, double dishwashers, double hobs, microwave and with down draft extractors. The second island to house under counter fridges, freezers, wine coolers ,warming drawers and seating. Then a large dining table with chairs plus a seating area in front of the fireplace. There wouldn't be anything on the walls due to the six windows and multiple doors.

Going overtime and over budget on a construction project is almost obligated. A very good contractor can control these issues most of the time. As someone who just finished renovations on my mobile to get it ready for sale, I feel you! We went over budget and Way over time. There's probably 30k in renovations that need to be done including reattaching the roof. Hopefully my son will be willing and able to get stuff done when he returns in March. I hope that everything goes well for you in every situation! You're doing a wonderful thing. Y'Shuas peace to you and yours.

Wondering if you can level some of the concrete by grinding the high spots down & then applying the self-leveling compound? Also wondering if you could run a steel beam in the flooring above the large wooden beam(s) that need to be supported & bolting the wooden beam to the steel beam & hiding the bolt heads by recessing them slightly into the large wooden beams? Would be nice to keep the kitchen as original as possible in appearance but have modern appliances to use. Some large islands would be great for food prep & help delineate areas of the kitchen, breaking the large space up into smaller areas.

They discussed this exact plan back in one of the first kitchen demolition videos, with a view to hide the beam in the stud wall, and also discussed having some reclaimed cast iron columns for a similar reason.

@@ThePethericks you might get more out of it if there is a battery direct port rather than a mains output. There is a significant amount of loss converting to AC

I'm not a supporter of EV cars. Hybrids yes, but not full electric. I am not going to sit for 45 minute charge for 12 kilometers additional mileage; or several hours for a full charge on a long car trip. The fact that you have to carry extra electrical power because no charging stations are within your area defeats the energy savings EV cars are supposed to provide. However, the Ecoflow power station is so great for powering home or equipment as you've shown. I would definitely buy one if needed.

I can not think of a dumber idea! That battery pack's weight probably DECREASED your charge range by more than the 12klm that it added. Why not just carry around a diesel generator for about the same weight but greater range generation? Oh wait, why not just buy and ICE engined car - because the dumb Europeans have banned them. At least France is heavily reliant on nuclear generation of electricity which is far more efficient than that eye sore windmill.

If you want a good worklight, check out the festool one on a tripod ... and if you want to save on materials...stop bying at local brico, buy in wholesale, you will save at least 20 % on your materials (wood/screws, etcetera...)

I do like the idea of making the kitchen into a hall or ballroom. It could be a great wedding/ events venue complete with hotel rooms.
