This is an electric heat storage cooker. They tend to be more forgiving than a fan or gas oven. The general principles will transfer across to different oven types though.

Slow cooks DO NOT! require leaving meat out to get to room temp, ESPECIALLY a large piece. The internal temp won't increase that much before the outside has risen above safe temps. And it's overcooked. However, I am seriously tempted to get an Everhot.
