I'm Zimbabwean and we make something similar to this but what my mom would do is add the smallest amout of salt and cayenne pepper to the broth and we keep the meat on the bone and eat it all! lol we also eat it with sadza which is corn mill cooked until a thick almost doughy mashed potato consisteny and we dip it in the ox broth. yummy!

Wow maangchi this soup looks so nutritious and tasty! I'm so tempted to make this. I've had it in restaurant before but it wasn't as "jelly" as yours which means it didn't have enough collagen. Going to share your recipe with mom..... PS LOL when the steam came out of your mouth. So funny.

Seeing this gives me happy memories of my grandmother. Her ox bone soup was very different and yet similar because while the seasoning was different it was made with ox bones and cabbage so it had a similar look when finished. I find the story of ox bones being expensive in Korea interesting, because as Maangchi said its cheap in the US so my grandmother knew the recipe because it was a good way to feed large family with minimum cost. Despite this I'm not fond of ox bone soup (one of the few things my grandma made that i didn't like), but It still reminds me of being in the kitchen with my grandmother. =3

I will repeat this part because it's important : The hardest thing for us at first was finding gochujang (red chili paste) and doenjang (soybean paste) that was halal,” Yu said with a small bowl of bright red paste. “Most brands use alcohol to speed fermentation, so we had to go out and find pastes that were naturally fermented. This gochujang is light and sweet, flavored with pears.”

She would do a huge pot of broth then store in the refrigerator. Then make a fresh soup everyday fir us. Really helped us get through those tests. Took off the test hang overs. 😂😂😂😂 You are one awesome lady. Thank you fir sharing your dishes and how to make them. Brings back so many college days with the same room mate those 4 years.
