Ingredients
2 lbs Oxtails
4 cups Beef Broth
1 medium Onion (suggested) sliced
2 Carrots cut into 1" pieces
1 tsp Salt
1 tsp Black Pepper
3 tbsp Vegetable Oil
1/4 cup Flour
1 1/2 Fresh Ginger, sliced
3 Garlic Cloves sliced thinly
1 Bay Leaf
4 Green Onions (whole)
10 sprigs of Thyme
1 Scotch Bonnet or Habanero pepper, seeds removed
1 tbsp Tomato Paste
1 tbsp Worcestershire Sauce

Oh my goodness! I love oxtails. My Auntie was 84 yrs old and taught me how to cook them way back in the 80's. She would season them up and brown them like you do. Then take them out of the skillet and use the drippings to make a brown roux. Then she'd slice up some onions, garlic and green bell peppers and saute them a little. She put the oxtails in a baking pan and put the onions and peppers on top and pour the roux gravy in to cover them up and bake them slow for a few hours. Made the whole house smell so good. The fat on the oxtails would be congealed kinda like jelly. They'd be so tender melt in your mouth. We'd usually eat them over rice with the gravy and have candied sweet potatoes, collard greens and cornbread. I love those memories. Thank you AB for your recipe because it looks so delicious and easy to make with a real easy clean up. I can't wait to try your recipe. In the crock pot it won't heat up the kitchen and house so that's great. But I might have to take that oxtail juice outta the crockpot and use it for the liquid to make a really good roux and then pour it back in the crock pot over all them good tender oxtails. Yummm. Those oxtails are huge. Can't hardly find them anymore and they cost a hella lot more now. But you got me craving for some so imma try your recipe this week. Thanks for the good memories of my Auntie teaching me how she cooked. 🤗💖 I'd love to have a instant pot to see how that would work. I've never had one. A crock pot is a must have!! It's the only way to go for corn beefs, greens, beans, cabbage, pig feet, roast, chili etc...(So Tender) Don't waist your time watching a pot on the stove. We're living in the twenty-first century...…….Milwaukee, WI

trainwreck60 childhood memory: Mom cooking pintos in the old school pressure cooker (the whistling kind); she opened the pot too soon and beans exploded all over the kitchen ceiling, walls, floor, hot beans in her hair, etc. After nursing her burnt spots, the whole fam had a good laugh. Found dried out Pinto in weird places for months! 😂😝

AB... I grew up in The Bronx but my people are from VA, NC, and SC. Your recipes are EXACTLY what I grew up on. Being a dude who grew up in the 70's and 80's I never learned to cook. ( I wanted to be in d'em streets rather than be hanging out w/ my grands or parents.) Now I wish I had spent more time in the kitchen with my grands and parents... but i didn't. I love oxtails and that looks gooood!! When I was growing up Mama made Oxtail Soup or stew ..with tomatoes and potatoes , mixed vegetables with a tomato base and stewed tomatoes . She also used the Trinity : Green peppers , celery and onions . Hot buttered Cornbread and koolaid . You're bringing back great memories from back in the day ! 😄💖

Get the Crockpot version of the Instapot. It's the bomb!!!!! You can slow cook plus pressure cook, etc. in it. It has a coated surface which is why I went with the Crockpot brand vs Instapot. Clean up is a breeze.

Coincidently, I just saw oxtails at the butcher shop. My mother made this when I was a kid. I plan on making this when the weather cools...it's 107 degrees in AZ. BTW, I'm shopping at a butcher shop rather than grocery store due to virus. Butcher shop has less people, better quality meats and cheeses. Also, I don't want them to go out of business. Your recipe looks great, I will look forward to making this

This recipe is the "bomb!" I appreciate how you demonstrate during the instructions. It makes it so easy to follow when I attempt tk make on the dish myself. So far every video instruction you have put on is excellent. I wish you had a cookbook containing all your soul food recipes and specially a "Keto" section. My wife is Filipino and they have a delicious recipe for Ox Tails using a thick peanut sauce with vegetables. It’s called Kari Kari and they serve it with white rice and side of lumpia (Filipino egg rolls). You should check it out. We’re going to give yours a try as it looks fantastic.

I'm Jamaican and I buy my oxtail from a Caribbean grocery store. They tend to cut the excessive fat off because they know we Jamaicans don't play that. 😉 See if you have one near you.
