Same hear! And he uses both hands to open his cracked eggs! I somehow feel validated in insisting on using two hands instead of using one hand and picking out egg shells until I’m “good enough” at cracking an egg. This is a chef that is more concerned about teaching than showing off. Bravo 👏🏻

This is it. I don't just want to know that you are doing something, I want to know *why* you are doing it. If I'd have learned more of the "why's" than the "how's" when I was younger, I'm sure I would have continued a career in cooking. Maybe that's on me for not being too interested at the time, or maybe it's on my teachers for not *making* it interesting.

The Master Chef yet again gives a lesson that is something reachable to any person, even if they have limited means. This is harder to do than requiring students to have a full kitchen with everything, and access to every kind of ingredient. His engriedient is love here!

Jacques, some of my most wonderful memories of my mother are the 2 of us watching you cook on television and then trying your recipes. Thank you for the wonderful memories. I remember one particular episode where you were cooking sugar and your dipped your fingers in water & grabbed the bubbles of molten sugar to test what stage you were at. We both were amazed.

I'm starting to doubt that these were recently recorded. It takes a lot of the excitement out of it. These must be from months, or years earlier. I'll see how long it takes for this channel to answer my previous questions, regarding when these were recorded, before I decide to unsubscribe, or not. I want to be subscribed to a channel that is actively working with Jacques. If I don't know when this was recorded, then how can this channel be trusted with providing new content? It's truly amazing, how far a little bit of information goes. It can mean the difference between keeping subscribers and losing them.

I love making omelettes for my friends and they always say two things: I didn't know eggs could taste so good and where did you learn this? I owe it to Jacque. Watching him and Julia cook on PBS as a child gave me a passion to cook and showed me how food brings people together. What a beautiful man he is, so full of love and kindness.

I learned how to make the classic french omelet from Chef Pepin on his PBS shows several years ago. They are fantastic and he's a wonderful instructor. I do that too sometimes. Two keys is to not stir it around that much, the other is if you see gaps forming and the liquid isn't filling them up, smear the top of the omelette around until it fills in (like you're spreading icing on a cake).

Dear Monsieur Pepin, I am a great fan of all your videos but particularly this one. I have been trying to cook a good omelette for many years but to no avail so I gave up as they never came out right. But I watched this video and it inspired me to try again and this time it worked !! Not 100% perfect but a good 90% and I can se now what I need to do to improve next time. I also adore your 'fridge' soup as many of my recipes are made up on the spot depending on what is in the fridge or freezer. Thank you for being a great teacher and chef. Kind regards Kate

He is old school. He was taught how to cook when non-stick cookware was not invented yet. Everyone used metal utensils on metal skillets back then.

Depends on the pan. If its a normal shop bought non-stick pan, absolutely not. A professional pan, absolutely okay. Amazingly the shop bought non-stick pans that last a few years can be more expensive than a professional pan that will last the average home cook a lifetime.
