And I'm just counting specific videos/blogposts that I looked up in a panic because I had to make something in a big hurry, because it would be impossible to quantify how valuable the general knowledge of your videos have been. I grew up with my Mom making something she called "head cheese" that looks a lot like this. My father is very elderly and now lives at the hospital and my mom still brings him and the other residents who live there some of this traditional (French/German) "head cheese". They go crazy for it. Thanks, Chef John. Along with another wonderful recipe, you've refreshed a very happy memory for me. :)

Klaus Klaus I'm actually not sure. It's adapted from a recipe I use at culinary school. It calls for mace and sage instead of nutmeg and marjoram.

Matt Michalak I'm not entirely sure about all the ingredients but I used to make Bratwurst a lot with my grandma when I was a child (I'm German btw) and as far as I can remember, her basic spices for Bratwurst were Marjoram, Mace, Cardamom, Salt, White Pepper, Allspice and Caraway, although she sometimes added Garlic and/or a little bit of Ginger. I'm not too sure about the sage tho, since it will take away a little bit of the "hearty" feel a Bratwurst should have I think. But who knows, maybe it'll turn out great, after all, you're the George Hearst of your homemade Bratwurst :)

Thanks for showing how KitchenAid mixer plus meat-grinder attachment performs. Now I won't buy those and just stick with 2 separate devices. One for dough mixing and one for meat-grinding. Oh, and that Pâté looks amazing. This will be totally my next attempt to make something meaty to put on slice of bread.

I loved how you anticipated viewers turning off the video. But they'd have missed the cayenne joke. Which was nice and subtle, unlike the uncommonness of this dish. . So I watched till the end. Mostly because I think you are a great teacher and I just enjoy learning how to cook better from watching your videos. But also because growing up, my dad used to eat all this kind of thing, so to honor his memory and what he taught me eat regardless of its stigma, I paid attention and am grateful for the world of adventure I've been cast into. (from a loyal fan who grew up on head cheese, liver sausage, pork fat sandwiches, Limburger cheese, and raw ground beef)

Another kind of "meatloaf", popular in eastern PA, made almost the same way is srapple. Use only fatty pork and a couple cups of corn meal instead of the panade; cook for two or three hours; mold, cool and serve sliced for breakfast after frying.
