You got the recommended recipe for foreigners to eat. Challenging to eat at first but once you try it. Like magic you slowly include dinuguan for your diet. Must try food in the philippines. "Dinuguan"... Dinuguan cook by professional cook has level up taste than we cook at home.

The visayan dinuguan is different from Ilocano, we don’t put too much vinegar and when I cook the dinuguan, it does not have a smell. I clean the intestines well by inverting it and soak it with lemon and flour to get rid of the smell and after rinsing it , boil it with sliced lemon and when it’s tender, then wash it again with flour to clean it more before cooking it. I also add some slice pork meat. 🇺🇸

Weee... just salt and a pinch of tawas....and rinse well in a flowing water...adding vinegar is just ok, as long as you rinse it very well...

I love dinuguan. Vinegar and the geen chilli pepper makes it awesome. It's just fat, meat of pork belly guys, don't be scared to try it. Once you tried it with rice, you'll change your perception.

You need to squirt some lemon or calamansi on the palabok prior to eating. Probably lemon since you're in the USA (calamansi is hard to find in America since they have a short shelf life).

The second pan cit you tasted is called Pancit Bihon it seems like dry. The fried rice seems like Chinese style (not authentic Filipino recipe). The best so far : the Dinuguan, palabok and the shrimp..I cooked authentic Filipino foods at home and bring also to work which my co workers enjoyed.

Dinuguan is made in a slightly varied way in different parts of the country. I personally don’t like my dinuguan less than black. If it’s a dark brown color, it’s not fully cooked (just my opinion). Again, just preference. I simmer my stew for a long time, it also thickens the soup and turns it a dark color, essentially brown. I also learned from my uncle early on that he doesn’t use innards, normally hog maws or pig stomach. No matter how well, how many times you boil it with vinegar, onions and bay leaf, it still comes out too “funky”. Lol. I use pork, a combination of side pork/for more fat and pork shoulder; both cut in cubes. I also pre cook/boil pig ears and concentrate on the cartilage for the texture. After boiling, must be well sautéed with garlic onions and ginger. I also add a couple of pieces of bay leaf for aroma (as well as towards the end).

It's easy for her to eat filipino foods, maybe she has filipino genes. Her family originated from Louisiana. The place where hundreds of filipino seamen escaped too, after jumping ship from Spanish Galleons ( Manila - Acapulco Galleon Trade 1665-1816 ). She could be Cajun-Pinay !

In Bicol, it was a trend to put toppings on the pancit bihon such as dinuguan, adobo or bistik. I used to eat it in meryenda time when I was in highschool.
