Pachadi is one of the Kerala Sadya side dish. This can be made with Beetroot or Cucumber. Its very healthy, Colorful and Tasty. This will Traditionally served in Banana Leaf as the side dish for sadya Rice..
Ingredients
Beetroot - 1 No
Yogurt - 300 Ml
Coconut - 1 Cup ( Fresh Grated)
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 /2 Tsp
Green chilly - 1-2 Nos
Ginger - 1 Small pc
Salt
Curry Leaves
For seasoning
Coconut Oil - 1 Tsp
Mustard seeds - 1/2 Tsp
Red Chilly - 2-3 Nos
Curry Leaves
Boil Beetroot with 2 Tbsp of water.. let this to cool, . you can either grate or grind or just crush this as per your choice..
Grind coconut with mustard cumin ginger and green chilly.. make a nice thick paste..
Heat grated beetroot with ground coconut paste and saute for 2-3 minutes in low flame.
now switch off the flame and add yogurt. add salt and give a nice mix. add some curry leaves and gren chilly. this will give a fresh smell..
heat oil add mustard green chilly and curry leaves, and pout on this pachadi mix.. thats it... Our healthy and tasty Pachadi Ready... Enjoy with your rice..
