Meet Pad Kee Mao, aka Drunken Noodles - Thailand’s legendary hangover cure and one of my all-time favorite stir-fried noodle dish. Legend has it that this fiery plate of magic was born out of an angry wife’s vengeance, determined to punish her drunk husband. Lucky for us, her rage gave us one of the most epic noodle dishes ever!
Quick, easy, and guaranteed to raise your heart rate (and maybe your core temperature), these noodles are everything you need for post-party recovery...or just a killer dinner. Warning: your cheeks will sweat, your taste buds will cry and you might even hallucinate (in the best way). Be sure to have milk on standby. 🥛

PAD KEE MAO INGREDIENTS (Serves 2)

NOODLES:
• 200g Fresh Flat/Wide Rice Noodles (commonly found in Asian grocery stores)
Other substitutions:
Dry Rice Noodles amzn.to/3YJKmfA
Your fav spaghetti amzn.to/4fqo7Ta
INGREDIENTS:
• 8 oz Protein of your choice, even tofu
• 120g Bell peppers, multi-colored
• 100g Gai lan
• 1-3 Red chillies (depending on your spicy level)
• 4 Cloves of garlic
• 2 tbsp Oil
• 1/4 tsp Chili Powder (optional if you like extra heat)
SEASONING SAUCE:
• 2 tbsp Oyster sauce (This is a popular Thai brand) amzn.to/4bRLWAH
• 1.5 tbsp Fish sauce (If you don't have any at home, you can try these choices:)
Megachef Thai Fish Sauce (used by most Thai restaurants) amzn.to/3YbcJEY
Red Boat Vietnamese Fish Sauce (less salty and subtler flavor) amzn.to/3ScXasq
• 1/2 tbsp Liquid Amino Seasoning amzn.to/3YSJOE8
• 1 tsp Monkfruit sweetener amzn.to/3VgAHfN (Or just plain ol' sugar)

• 2 cup Italian basil

Dramatic adding of noodles is never unnecessary 😂 I wish I could get fresh noodles that wide in London - we can get ho fun (about 1cm wide) or cheung fun (big sheets) but nothing in-between. Can you share the location of the Pad Kee Mao auntie in Wongwian Yai? It's one of my favourite areas to just walk around and enjoy "real" Bangkok, and I hope to be back in January, so I'd love to try it!

234 Soi Krungthonburi 4 - it is a shop house with no signage, a few plastic tables inside and the auntie and uncle doing their thing for lunch some days. I hope you'll get to explore and take it all in. As for fresh noodles, ho fun should work just fine because in the end, you can work with what's available where you at.
