Between the busyness of the holiday season with my chef day job, and unfortunately some stress from the recent LA fires (all is safe) and focusing on cooking for first responders as a show of support, we took a time out from making videos. Dramatic adding of noodles is never unnecessary 😂 I wish I could get fresh noodles that wide in London - we can get ho fun (about 1cm wide) or cheung fun (big sheets) but nothing in-between. Can you share the location of the Pad Kee Mao auntie in Wongwian Yai? It's one of my favourite areas to just walk around and enjoy "real" Bangkok, and I hope to be back in January, so I'd love to try it!

234 Soi Krungthonburi 4 - it is a shop house with no signage, a few plastic tables inside and the auntie and uncle doing their thing for lunch some days. I hope you'll get to explore and take it all in. As for fresh noodles, ho fun should work just fine because in the end, you can work with what's available where you at.

try washing more beforehand or blanching

Good question. Few tips - pick younger, fresher ones so greener leafs and firm stalks; you can blanch quickly that can help reduce some bitterness; definitely don't overcook. Hope this helps.

Oh yeah, as far as fall favorites….the fall season kicks off soup season. Your pumpkin soup is perfect for this time of year. Of course, one of the biggest meals of the year in this country, Thanksgiving, happens in the fall. The things I look forward to this time of year are the drinks….pumpkin spice lattes and hot apple cider 🙂
