I recently found a local thai place that makes Pad Krapow, they make it with ground chicken instead of pork/beef. It's sooo good, I now wish my actual favorite thai restaurant made it cause I bet it would be even better.

Hot tip galangal is a stunning screening hedge as well. Grow it in a big tub first for a few months then tip it out and break it up. Once planted in a line by a fence (or as a fence) it’s an impenetrable wall of wonderful green glossy leaves.

For when you don't have time to make a green paste from the basic ingredients (it is the best way), I was told how to 'doctor' a commercial green curry paste by the wife of one of my co-workers many years ago. She was Thai, and her family owned at least one good restaurant in Bangkok. She cooked brilliant Thai meals, so I believed her and it works. This is for genuine, Thai green curry pastes - Mae Ploy or Maesri or similar. For every 2 Tbsp of green curry paste, mix in 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp fennel powder, 1 Tbsp onion puree and 1 tsp garlic puree. Make your own purees. Commercial ones tend to have vinegar, sugar and other things in them.

I just use mae ploy curry paste's green, red, massaman are all very good and buying the premade is half the cost of buying the seperate ingredients. Would i like to make my own sure but to be honest mar ploy are better than mine attempts and cheaper, no brainer really. Thanks for the recipe, Take care, God bless one and all.
