One trick I've learned after years of trying different methods is to add a heaping tablespoon of high quality peanut butter to my Japanese curry. It adds another depth of nuttiness, and creaminess. Try it sometime and I think you'd agree!

Ah I love you for this Pai! The thing is, whenever i searched for Japanese curry recipes, I always found ones that used curry blocks and those sort of things I cant find, the the from scratch ones had an ingredient or two like that. So I really appreciate this ❤ totally going to try it 💕💕

Born in a Japanese family, I always used to see those curry blocks in my house, but I've never tried to make it from scratch! Since I'm living in Japan now, I'm going to give it a try. Looks so yummy and it's doesn't seem hard to make :D Thank you for the awesome recipe!

I find a lot of Japanese people add at least one secret ingredient in their curry. My friend puts a small bit of cocoa powder in his. So good!

I am so excited to try this. I often play with adding a little sweetness to my Japanese block curry by adding pineapple juice. Now I feel like if I make it from scratch I can have even more options on how to play with the flavors. Thanks so much for this one.

I am going to make this gluten free by using cornstarch as the thickener. Grew up on Japanese curry mixes and like the Vermont brand the best because it is mild and uses apples. I always added some Penzey's curry to strenghten the mix though. And I use lean pork instead of beef or chicken.

Japanese curry is supposedly inspired by British curry that is inspired by Indian food... so it's fusion fusion. It's great to because you can experiment with all kinds of flavors and ingredients

To convince everyone to get a bottle of Worcestershire sauce, I’m gonna recommend some simple recipes. Basically Worcestershire sauce goes well with anything deep fried or steamed that’s quite greasy. For example, schnitzels aka tonkatsu aka pork cutlet, shumai, soup dumplings. The idea is to substitute vinegar with something more flavorful and more citrusy.

Tried recipe. Substituted palm sugar for apple puree (didn't have apple). For vegetables, used sweet potatoes and Thai eggplants.

Hi Pailin. I like your recipes a lot. Do you know this curry closely resembles the traditional Bengali mutton curry which is also known as mutton kasha. Though we use goat meat and instead of curry powder we use ground cumin, corriander, tumeric and chilli powder. Tomato puree is used in stead of tomato paste, but the purists prefer beaten curd or yogurt. Potatoes are usually the only vegetable added to it but the main difference of flavour is the addition of garam masala and clarified butter. It is served with rice too. I just think it is so interesting how two dishes from different countries can be so similar.

Pai, I have made curry rice for years. One of my friends in Japan used to work for a "street food cart" place (he went to an "Ivy League" University in Japan, but his part time work, besides tutoring, was cooking. He told me that "putting an apple" into the curry was his secret. It works pretty well. I decided to try a Granny Smith ( I think that is what the kind of sour green ones are called) into the recipe. Yep, a nice addition. What do you think?

Hi Pailin, when you put chopped potatoes in water, all the potassium goes in the water. Then you throw the water away with the potassium. Please try to cook with the water you soaked potatoes in or -better still- don't soak potatoes at all. Thanks for the lovely recipe.

Quick way to thicken dishes is to use potato starch. It doesn't tend to lump together, so you can just sprinkle and stir.

You could replace worcestershire sauce with same amount of oyster sauce. Works pretty much the same.

I was just thinking there should be a replacement possible for the worcestershire sauce. I've not tried oyster sauce before, just fish sauce. Is there a big difference between oyster sauce and fish sauce?

Oyster sauce is a thicker, not as salty as fish sauce, a little sweeter and a lot easier to handle (by that i mean you have to add quite a bit to ruin your meal, but fish sauce can really ruin your meal if you add too much).

I suppose you can use apple sauce as long as it's made from 100% apple with no added sugar or acids.

A lot of chefs are taught protein equals meat, but I made a Japanese curry using soy beef and it was just as good. And next time I make it I may going to try it with lentil or no meat replacement. The stewed veggies are so good.

well it is a texturized soy protein with flavorings that mimic beef, its more of a texture thing. It wasn't that expensive maybe a little bit more than tofu, but your not paying for water so you get more soy meat. I found them dry at a Vietnamese market.

It's a total of 2:30, and yes, if you cut the beef that size. Not if you cut the beef bigger.

If you're in Bangkok, try the neighborhoods where many Japanese life e.g Sukumvit- Thonglor. Also Isetan must carry them.And of course, just taking a screenshot of Pai showing the package and asking a Japanese may lead you to find them.
