Hinduism has 8 types of marriage ceremonies. The one which you spoke of is a typical "Prajapatya marriage". Among those 8 types, there's one called "Gandharva marriage" where only the participants marrying commit to one another and does not require permission of a third party or witnesses. Think of it as love marriage + co-habitation. Also, in India, if a man and woman co-habit for 10 years or more, then the woman gets all the legal benefits of a wife even if they never got married!

Following culture is also great and fun if it’s not forced upon anyone. The Hon'ble Supreme Court of India considered Live- In-Relationship as a de-facto marriage, I think after seven years.

I am an Atheist. And I would suggest that there is another facet to it: it is not mandatory to 'avoid, refute, or cancel' every ritual that comes from a religious foundation. For example, my culture is Hindu. I have my complaints with this culture but so do I have admiration. My parents have accepted me as an atheist because it is not always some bad thing in Hinduism to go that way. We all live in peace. Plus, I do attend their Puja-Path, I perform things as makes them happy. I don't ever find a need to offend them unnecessarily or to try to push them into manifesto of atheism. This is why, while being an Atheist, I never had any problem in getting along their way of marital ceremony. I did not accept the regressive vows and I did not perform anything demeaning to women or so. Rest of it was all partying and fun, and it doesn't give me any annoyance to get along with it.
