Today's recipe is a Tibetan Batang specialty. It's a very special dish for special occasions.
Ingredients:
80g rice
500g pork or beef
400g potatoes
optional: fermented chili paste
green onions
ginger
sichuan pepper corns
salt
50g oil
1 tablespoon salt
1 teaspoon ground sichuan pepper
dough:
500g flour
300ml luke warm water
7g dry yeast
1 teaspoon sugar

Tashi Delek Paldenla, this dish (Tinru) reminds me of my pola who used to enjoy eating and sharing his hometown recipes. He recently passed away few months and this dish specially with pork was one of his favorite dishes to eat with his family members. It is definitely a comfort food. Thank you for sharing your version of Tinru.

I only had Tingru once or twice in my life. It’s a famous dish of my ancestors. Ive always noticed a sense of belongingness/happiness in Baba people’s faces when they hear Tringru.”

It looks absolutely phenomenal, I will try it next week, I will just have to buy a steamer insert! Just one comment I noticed: Here, Swiss butchers often sell pork belly / bacon with still rib-bones in. I saw some bones in your pieces as well. This can be quite dangerous and even cost someone a tooth or just really unpleasant while eating in the best case. I am not sure why they sell it like that but I would make sure to extract every piece of bone first. I think your knives are so sharp, you may not have noticed. 😊 Thank you once again for a great recipe and kind regards from Switzerland as well.

Tingru is a popular dish of Ba, eastern Tibet. There are few dishes which connect you to your roots and this is one of them.
