Musakhan -مسخن Palestinian sumac chicken rolls. This is super easy to prepare and are absolutely delicious , A healthy snack for your iftar menu . Bolied and shredded chicken in Sumac flavored onion. Sumac is most commonly used in Middle Eastern cooking.
Made from the dried and ground berries of the wild sumac flower, sumac is a tangy spice with a sour, acidic flavor reminiscent of lemon juice. This fragrant spice is used to brighten up dry rubs, spice blends like za'atar, and dressings. ( www.masterclas...)
Ingredients for musakhan:
To cook chicken:
Chicken-300 g ( You can use chicken with bones)
Bay leave-1
Cloves-3
Cardamom-3
Cinnamon stick-a small piece
Pepper powder-1/2 teaspoon
Salt- to taste
water-3-4 cups
Filling:
Shredded Chicken
Onion-2 large ( Thinly sliced)
Salt-1/4 teaspoon ( more or less as per your taste)
Arabic spice Mix-1/2 teaspoon
Pepper powder-1/2 teaspoon
Sumac Powder-2 tablespoon
Olive oil-1/4 cup + 1-2 tablespoon for brushing the rolls.
Bread:
I used arabic Markook bread, Traditionally it is made with Saajj bread. You can use any thin flat bread like Tortillas, Spring rolls, Pita bread ( slit it) etc.
