Greetings! On my last trip to Amman, I learned how to make Musakkhan rolls with the the wonderful Fayzeh, who has catered so many of our family get-togethers. It is a delicious Palestinian dish with caramelized onions, shredded chicken and the insanely savory taste of sumac.
Traditionally it is made on flat bread, but today I'm sharing this "roll" method she was making that is great to take on the go, or bring out to parties and picnics. They also freeze well and can be prepared in advance and reheated anytime! And it's really quite simple to make, it just takes a bit of love.
I recently made these and brought them to a Brothers Green meetup ( / brothersgreeneats ) and they were an absolute hit!

This video is cut with some footage that I shot while I was working with Fayzeh in her kitchen as she prepared a large order for a customer. You'll notice her bread is much fresher (baked that morning!) as well as her sumac. But living in the U.S. we can still make these delicious dishes authentically- and I am so glad to be able to share visuals from both her and my kitchen!
