Love this recipe. Made them with some ground cashews in lieu of cheese, and loved them. My favourite empanada filling used to be sauteed onion and celery, mixed with some blue cheese (and walnuts for luxury). Now I am vegan I have not made them yet, but you inspired me and I will try and find a vegan alternative to the blue cheese texture and taste. Anyone have any suggestions?

Are you not worried about the possible negative outcomes when switching to plant based diet? I see and read a lot of ex-vegan stories and it's horrifying me. Specially when sometimes you could see their physical and health decline over time.

@@B.H.1987 Not necessarily. Nutrition isn't animal specific. Yes, I've seen the ex vegan videos like that but I have also known a 20 year plant based diet friend who is healthier than a horse. At the end of the day as long as you are getting proper nutrition to lead a healthy lifestyle then I think it's gonna be ok.

i’m half palestinian, my father used to make a dish i absolutely love, called warak dawali (i think...) it’s stuffed grape leaves :) would be fun to see u do a recipe on it! i love cooking and ur recipes bring back memories of my dad’s cooking :)

That sounds very similar to Romanian's "Sarmale in foi de vita" an influence from the Ottoman Empire - they're basically rice+meat+vegetables fried, stuffed into vine leaves that are stored in salt, rolled and boiled in a big pot. simonacallas.com/2018/07/sarmale-in-foi-de-vita/

Love your videos and love your recipes. But have to call you out on your video where you compare NYC to Amman. I'm sure as the child of wealthy parents, things are amazing to you all the time. But besides having to 'wear pants out of respect', I was wondering if you could share how Jordan respects you. What are women's rights in terms of their choices over her own body, sexuality and reproduction? What are the rights of the LGBTQ+ people in Jordan? Any Trans marches coming up? And please explain what Amnesty International refers to as the 'curtailed rights of freedom of expression and assembly'. You make Jordan sound like a bag of jelly donuts, but hymens are routinely checked on daughters and young women and girls, chaperones are still required in rural areas (the vast expanse of Jordan) and you still have a monarchy, when criticized will land you in jail, without trial, for a very, very long time. Come on. This is better to you than NYC? Please explain. BTW: It's June. Happy Pride!!!

Many cultures have centuries of knowledge of medical dietetics, rules for diet and the effect on health. Many cultures were once filled with learned philosophers. Now, some may study the texts but may not fully understand the importance of prescriptions nor strictly follow them. Such is how it is in India; such is how it is in China; such is how it is in the West with Greek and Roman medicine gone. The Arabic world? Possibly the same. There are no doctors like Ibn Sina, learned philosophers collecting knowledge from throughout the known world. Centuries of dietetical texts not followed. Barley? possibly the best grain. No white flour, no rice, no wheat flour, etc. Beans? Of course. Sesame (black preferred) over any kind of oil. Olive? naturally bitter and astringent unbrined. Vegetables? Prefer traditional bitter green leaf over all else. Spinach compared to the best of traditional greens that now maybe one can only find by traveling to some field mountain or forest to harvest oneself? Not even close. Potatoes if ones concern is immunity, resistance to disease, longevity, etc.? Useless. Flowers? Daily. Fruits? Pomegranate whole. Wild bitter and astringent figs with leaf as vegetable. etc. Many more rules. If such was followed, there would be no pandemic. Are there studies showing the immunomodulating effect of such foods and even antiviral properties? Thousands of studies. Anyone reading them or telling the world? Seems not. Would the average person of the modern world like the taste of such foods? Perhaps not. Countless habits that now the reason for which may no longer be known. Oud wood (aquilaria) as fragrance and medicine? Antiviral activity among many other properties. Currently used by Arabic doctors along with many others as fumigation. Maybe not the most powerful of antivirals but one among many. I say such since the rest of the world seemingly is unconcerned and unwilling to follow such. The knowledge exists too within Arabic medicine. But who has the desire to spend decade studying them, with the dedication and spirit of the greatest philosophers like Ibn Sina himself. And who cares enough and is capable enough? The knowledge exists. For the well-being of the world, Arabic medicine is one source of hope for the future.

And as I saw your immunity broth, such ingredients as you can imagine are good to use regularly. There are many more herbs and spices. Of some of them, one of the primary as you know is among the most valued in Indian medicine though there it is mostly not used except by it seems those areas where it is native. But like oud (agaru in Sanskrit), it remains well known as one of the main herbs of the Arabic world: black cumin (nigella sativa). Are there studies showing it among the best of common spices even as antiviral and even as one of the main (of several) components for covid-19? Yes. Same as with numerous other foods, such knowledge remains only in the minds of researchers as protential drug and products; it never makes its way into the world.

Hello, Thank you for the years of enjoyment I have had watching you make fantastic healthy dishes for all of us to enjoy. I have made some of them and found them to be something I wanted to include in my weekly meal planning. I have never been to the middle east, but if the food your showing us is an example of what is served in the homes of your family and the Palestinian people, then I cry a little inside that I have missed all that flavor for all of my life. Please put up a recipe for your Zaatar that you used in your 'Ful Madammas video. It looked like something you made yourself or you said it was from Genneen ? (spelling) I have not seen Zaatar sold in stores that look like the spice you were using, most of them are some variation of brown to red color, but yours had sesame seeds and looked very green and tasty. I want to try that very much. You might want to make a few video's of your favorite spice mixes that you make yourself, and show everyone how they can make them as well. So many cultures make and use their own spice blends and each one is different from the one their neighbors make with the same name. Here in America we always just buy our spices and our mixes like Lawrey season salt product, are mostly factory made. Our grocery store spice section sell hundreds of blended spice mixes and blends, that could be very old, and made from any type of spice or herb grade. Sorry for the long run on post. I just hope you will share with us your herb and spice blends that you keep on your spice shelf.
