Ooo! Salade Nicoise! I used to make something like that for my first wife. It was basically sliced boiled potatoes and a sliced hard boiled egg, lettuce, green beans, and canned tuna or anchovies with a dill vinagrette salad dressing. I thought it was pretty good. I never thought to put it in a sandwich, though.

Ok good to know I’ll try Framboise’s recipe. I always just made a salad Nicoise in a bowl and just put it in a nice crusty bread. And Cabbage hmm, traditionally i made of tomatoes, hard-boiled eggs, Niçoise olives green peppers and anchovies or tuna, dressed with olive oil salt and pepper.

We used to have a fantastic Pan Bagnat from the little wooden hut cafe that was in Beaulieu, across from the royal riviera, sort of opposite the beach, but it’s been closed the last few times we have been. Do you know where she’s gone?!

Technically you are correct BUT Nice joined France 12 June 1860. Birthday coming up. But yes, was before WW2. :-)

And then look up at the statue of Giuseppe Garibaldi and the two women next to him on each side, one symbolizing France, the other Italy. And yes, the one topless is France, you guessed that one correctly.
