Legend has it that Kaiserschmarrn was invented when the cook wanted to prepare pancakes for the emperor but he messed it up and it was torn in pieces. He served it anyways and the Austrian emperor was angry about it looking in pieces like that and said this looks like nonsense but that he tasted it and liked it. So it was supposed to be pancakes once but it‘s a different dish on it own. It literally means: „Emperor‘s nonsense!“ because of its look.

It's not supposed to be "pancakes", pancakes exist of course and are very simple, but they might even have come afterwards. Anyway, it's its own thing, and tastes much better/richer, though also sweeter, and was apparently supposed to be an original creation which was just served this way, because it was so thick. Still, the name is right. However I think it's dragging it down and givinf a wrong idea by suggesting it's a failed "pancake" (f--king pancake, who cares).

Here in sweden we make a similar dish that we call thick pancake or oven pancake (just not served cut up and often with bacon in it and never rasins). If this is as similar as it looks the answer is probably that the ingresients are the same just baked in the oven instead of in a pan. I belive yorkshire pudding is basically the same thing with more eggs

i assume you already googled how "Kaiserschmarrn" usually looks like. normally its not drenched in applesauce, but basically a thick, fluffy pancake torn into pieces. a "real" austrian cook will tell you its forbidden to cut it, it must be pulled apart... for whatever reason. it shouldnt taste like cake, i guess its a receipt to stand against the sauce to not turn into a liquid over time. the most obvious difference to pancakes is to whip the eggwhite before folding it into the sugar,yolk,milk and flour mixture - no baking powder or yeast. often there are raisins added, but not everyone likes them. even though im austrian, i tend to leave it into one piece - a big pancake and occasionally i use a pizzecutter to slice even pieces and the "kaiser" (emperor) didnt turn me into "schmarrn" (pile of nonsense) yet. its common to serve it with "apfelmus" (applesauce), but afaik its not a tradition. often you will find it simply dusted with sugar or with some jam. the story says it was "invented" to honour the austrian-hungarian emperor, but from experience i can tell you its much more reasonable to assume that its the product of bad cooks trying to get a runny pancake out of the pan by scraping it into pieces before it turns black. at least thats how i made my first one. : )
@juiceboxfromthevoid2 жыл бұрын
So like a scrambled pancake?
@thomasherzog862 жыл бұрын
@@juiceboxfromthevoid yeah. basically. but if you stir fry it like scrambled eggs, i guess lots of the fluffyness gets lost. i think my grandfather used to do it that way as he liked it more firm and chewy. the benefit for this method is, that you get much more fried, browned bits and less inside part of the pancake.

This is Kaiser schamrn ( Emperor`s botch) it is an traditional austrian dish and is as the name gives away a ruined pancake with royal ingredients. We here in germany eat it too but it is typical Austrian. So it is meant to be in pices anyway, usualy it looks more like scrambled eggs.
