I just made this today and it was amazing! Even though I didn't use the kachampuli vinegar and instead, as you did, used the dried fruit soaked in water- it really WAS close to authentic! Save for a few adjustments (I marinated the pork overnight in the dry masala with a little salt) Thanks for sharing. I'm saving this for my recipe box!

I reckon that only in India, not one single person is ever neglected in their dietary preference in terms of cultural and religious aspects. This is the ultimate reason why I love Indian cuisine. Vegetarians won't die of hunger and boredom in India (but they will in other parts of the world) because vegetarian food in India is the most excellent in the world, absolutely no competition from other nations. In my experience, add about a tablespoon or two- synthetic vinegar will anyway get milder with the heat and apple cider vinegar is any way light. If you are using Kachampulli then it is about a tablespoon. Tamarind also works but mostly in pork a vinegar goes best. @@MIDRaju

Amazing authentic Coorgi Pork Recipe. Made it today all are licking their plates! I made some powder masala extra for another day labelled it with date so that we use it fresh. Stored in glass bottle in the freezer.

I think Kodava ppl created a whole new style of curry that has a smoky flavor. It reminds me of barbecue but without any need for a tandoor, grill, coals, or wood fire.

I tried to make this dish recently and I thought it was incredible. I loved how hot, spicy, and tangy it was. But I also do not have access to coorg vinegar so I used kokum instead. I'm not sure if that's the same thing as 'cambogia' or gamboge. Being that I've never tried the original pandi curry, I have no idea if kokum was appropriate or not for this recipe. Is kokum ok to use for this particular dish if you do not have access to Coorg vinegar?

Ajit Parmar sorpotel is a goan dish ..very tasty to eat especially with pav ..even muslims in goa eat it..thou not every one..hindus also love it but we love to eat fish curry as the main course..if i dont eat fish curry rice i find it difficult to sleep at night..

It's gamboge - garcinia gummi-gutta. Tamarind would work fine, but does have a different flavour.

You may be from Coorg, but that recipe is far from nailing it. The wet masala in Coorg pork is not green. You don't put wet dry masala to raw pork and then pressure cook it.

In all your videos you always burn up your whole garam masala when roasting it. For your kind information when roasting spices when you get that dark black color that's not called roasting, that's burning them. Please don't misguide new cooks with wrong cooking instructions.

If you're a fine cook you'll know how to roast without burning. The traditional pandi (pork) curry is black in color because the spices are deeply roasted in this manner adding an absolutely delectable taste to it. May be you should try and and then comment about it, no??
