Simplified recipe for making Verona pandoro
370 gr Manitoba flour 0 (+ 150 + 150)
Total flour 670 gr (strong flour 13% protein)
3 gr yeast for bread

190 gr sugar
4 egg yolks + 1 whole egg
200 gr of butter
200 grams of warm water
little salt
lemon or orange
vanilla
Kneader
Ventilated Oven 200 ° c 10 minutes + 170 ° 35 minutes
Let's prepare the Pandoro
Activate the yeast:
Put 100 grams of warm water and 100 grams of flour, 3 grams of bread yeast, a tablespoon of honey into the mixer. knead for a minute, let it rest for 30 minutes.
Add 170 grams of flour a little at a time, one egg, 190 grams of sugar, orange and vanilla flavoring, knead 10 minutes.
Add 4 egg yolks one at a time while kneading, add 200 grams of butter a little at a time while kneading, stir 10 more minutes.
Now you have to use your hands to complete the dough for your Pandoro:
Add 300 grams of flour (150 + 150) a little at a time. knead by hand for 10-12 minutes until the dough is smooth.
Let it rise for 60- 90 minutes. it must become double.
Now put some flour on the table, and put this dough on it. You squeeze it and roll it in both sides as I do in the video. This last operation you have to do twice.
Create a ball and place it in the pandoro mold.
The pandoro mold must first be greased.
It must rise, covered, until the mold is full, The time depends on the temperature you have in the house, it usually takes 5-6 hours.
Cook in the oven at 200 ° c for 10 minutes + another 35 minutes at 170 ° c
The pandoro must remain on the table all night to cool.
The next morning ... magic.
