Step-by-step recipe:
▪️Heat 1 tbsp oil in a pan, add one butter cube.
▪️Add whole spices(1 bay leaf, 4 green cardamoms, 4 cloves, 1 inch cinnamon stick). Add 2 dried red chillies and 1 green chilli. Sauté until it turns aromatic.
▪️Add 12-15 garlic cloves and 1.5 inch roughly chopped ginger. Sauté for a minute.
▪️Add 2 sliced onions. Sauté for 2-3 minutes until the onion is translucent.
▪️Add 12-15 cashew nuts and 5 sliced tomatoes. Mix and cook for a minute.
▪️Add salt and 1 tsp red chilli powder. Sauté and cook until the tomatoes turn soft and mushy.
▪️Let the mixture cool down a bit and then transfer to a blender.
▪️Grind the masala to a fine paste.
▪️Strain it through a fine strainer to a bowl. Keep it aside.
▪️Heat 1 tbsp oil in a pan. Add some butter cubes.
▪️Once the butter starts to melt, add finely chopped onions. Sauté until turns light golden.
▪️Add 1 tbsp Kashmiri red chilli powder, 1 tbsp coriander powder, 1/2 tsp garam masala powder. Fry for few seconds.
▪️Add the ground paste into the pan. Mix well.
▪️Add salt and cook for 2 minutes.
▪️Add water and cook for 3-4 minutes.
▪️Add in the paneer cubes and some roasted kasuri methi. Gently mix and cook for 2 minutes.
▪️Add some butter, some chopped cilantro and 2 tbsps cream.
▪️Serve paneer butter masala hot with naan, roti, paratha, pulao or jeera rice.
